Creamy Swiss Spinach Bake

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 (10 ounce) packages frozen chopped spinach, thawed and drained well
  • 4 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 teaspoons dijon mustard
  • salt and pepper
  • 1 cup half-and-half cream, divided
  • 1/3 cup grated swiss cheese
  • 4 tablespoons parmesan cheese

Recipe

  • 1 set oven to 350 degrees.
  • 2 butter 1 2-qt casserole dish.
  • 3 in a medium saucepan, melt butter.
  • 4 mix in flour to make a roux.
  • 5 add mustard and cream, whisking until thickened; add swiss cheese, 2 tbsp parmesan cheese and 1 cup half and half cream; mix well.
  • 6 remove from heat; cool 5 minutes.
  • 7 in a bowl, mix together spinach, the cooked cream sauce, salt and pepper to taste.
  • 8 turn into prepared casserole dish.
  • 9 top with remaining 2 tbsp parmesan cheese.
  • 10 bake for 20-25 minutes, or until hot and bubbly.
