California Hot Chicken Salad

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 3 cups cooked diced chicken
  • 2 cups thinly sliced celery
  • 1/2 cup slivered salted almond
  • 1/4 cup pimiento, cut in narrow strips
  • 1 1/4 cups mayonnaise
  • 3 tablespoons lemon juice
  • 2 tablespoons grated onions
  • 1 teaspoon salt
  • 1 cup crushed potato chips
  • 1/2 cup grated american cheese
  • sugar, if needed, to taste

Recipe

  • 1 toss with a fork; chicken, celery, almonds, piment, grated onion and seasonings.
  • 2 blend mayonnaise and lemon juice and add to the first mixture.
  • 3 spread in a greased casserole.
  • 4 mix grated cheese and potato chips. sprinkle over casserole.
  • 5 bake in a preheated oven at 375 degrees until lightly browned and heated through.

Chocolate Raspberry Cheesecake

Ingredients

  • 1 (6 ounce) chocolate wafer pie crust, prepared
  • 6 ounces cream cheese
  • 1 (14 ounce) can sweetened condensed milk
  • 1 egg
  • 3 tablespoons lemon juice
  • 1 teaspoon vanilla
  • 1 cup raspberries
  • 2 ounces semisweet chocolate
  • 1/4 cup whipping cream

Recipe

  • 1 preheat oven to 350°f.
  • 2 beat cream cheese fluffy, add condensed milk and cream smooth.
  • 3 add egg, lemon juice and vanilla; mix well.
  • 4 arrange the raspberries on the bottom of the crust.
  • 5 carefully pour the cream-cheese mix into the crust.
  • 6 bake 30-35 minutes or until center almost sets.
  • 7 cool.
  • 8 in the meantime, chop the chocolate and melt it slowly; stir in the whipping cream.
  • 9 cook and stir, until the mix is smooth and thick.

Creamy Feta Dip (some Like It Hot, Others Not!)

  • 200 g feta cheese (drained and crumbled)
  • 250 g cream cheese
  • 1 1/2 tablespoons olive oil (extra virgin is better for this, but other olive oil works in a pinch)
  • water
  • 2 teaspoons garlic powder (not garlic salt!)
  • 2 -4 teaspoons sambal oelek (2 tsp or 1 chile is mild) or 2 birds eye chile, chopped and deseeded (2 tsp or 1 chile is mild)
  • 2 tablespoons tomato paste
  • 1 tablespoon oregano
  • 1/2 teaspoon basil

  • 3 add more water for a thinner dip if you prefer, which is better for chips or veggies. it is better to do this after processing the dip as that some cream cheese types make for different results.

Recipe

  • 1 mix first 2 ingredients together. spread in a 12 inch baking dish.
  • 2 spread seafood sauce on top of first layer.
  • 3 scatter crab meat.
  • 4 add onions and green pepper.
  • 5 scatter shredded cheese.
  • 6 top with tomato and green onion.
  • 7 chill for 30-60 minute.
  • 8 serve with crackers.

Creamy Egg Salad

Ingredients

  • 1 (3 ounce) package cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup finely chopped sweet green peppers or 1/4 cup sweet red pepper
  • 1/4 cup finely chopped celery
  • 1/4 cup sweet pickle relish

  • 1 teaspoon unsalted butter
  • 1/2 cup onion, chopped
  • 6 slices cooked bacon
  • 1/2 lb swiss cheese, shredded (i use low or fat free)
  • 2 tablespoons flour
  • 3 eggs, beaten
  • 1 cup skim milk
  • 1/8 teaspoon ground nutmeg
  • 1 frozen 9-inch pie shell

  • 1 preheat oven to 400 degrees.
  • 2 melt the butter in a heavy nonstick skillet over medium high heat.
  • 3 saute onions for 5 minutes, or until tender.

  • 3/4 cup unsalted butter
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 3 ounces cream cheese
  • 1 3/4 cups flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon clove
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup golden raisin
  • 1/2 cup brown raisins
  • 2/3 cup buttermilk
  • 1/2 cup confectioners' sugar

  • 1 set out butter and cream cheese to soften to room temperature.

Cheesy Smoking Grits

  • 2 1/4 cups water
  • 1/2 cup quick-cooking grits
  • 4 ounces velveeta cheese, cut up
  • 1 dash garlic salt
  • smoked paprika

Recipe

  • 1 in saucepan slowly stir grits into boiling water.
  • 2 reduce the heat to simmer, cover pan , but stir every minute or so to reduce clumping. cook for 12-14 minutes or until thickened.
  • 3 add cheese and garlic to cooked grits and stir until melted and combined.
  • 4 you could just serve this now as a side if you didn't want to wait but --
  • 5 to make them fantastic -- pour grits into a greased baking dish , sized accordingly to how much you have made, sprinkle top with smoked paprika and put into a preheated 350 oven for 15-20 minutes.
  • 6 i like a slightly browned crust to mine and i like it to set up so 12-15 minutes works best for my taste -- enjoy!

  • 3/4 lb fettuccine, uncooked
  • 6 tablespoons unsalted butter
  • 2/3 cup whipping cream (may need more if trouble blending cheese)
  • 1/4 teaspoon salt
  • 1/8-1/4 teaspoon pepper
  • 1/8-1/4 teaspoon nutmeg
  • 1 cup parmesan cheese
  • 2 tablespoons chopped parsley

Recipe

  • 1 cook fettuccine a large pot of boiling water 6-8 minutes drain well. return to dry pot.
  • 2 while fettuccine cooking place butter and cream in heavy skillet over medium low heat stir constantly 2 minutes then add salt, pepper and nutmeg. remove from heat and gradually stir in cheese until throughly blended and fairly smooth. return to skillet briefly to heat if necessary to completely blend cheese but don't let sauce bubble.
  • 3 pour sauce over fettuccine in pot place over low heat, stir and toss unil slightly thickened and fettuccine evenly coated 2-3 minutes. serve immediately.

Delicious Rosemary Cheese Appetizer With Fig Preserves

  • 1 (8 ounce) package cream cheese, softened
  • 3 ounces goat cheese, softened
  • 1 teaspoon chopped fresh rosemary
  • 2 teaspoons honey
  • 1 teaspoon fresh coarse ground black pepper
  • fig preserves

Recipe

  • 1 spray a 1 1/2 cup mold* with cooking spray, then line with plastic wrap, allowing edges to extend over the sides of the mold.
  • 2 set aside.
  • 3 *ifyou don't have a mold, you can use a miniature loaf pan, or simply shape into a log and roll in wax paper to chill.
  • 4 beat cheeses, rosemary, honey and pepper with an electric mixer until smooth.
  • 5 (or you can use a food processor).
  • 6 spoon the mixture into the prepared mold.
  • 7 cover, and chill at least 2 hrs.

Chinese-style Duck Confit

Total Time: 24 hrs 40 mins Preparation Time: 24 hrs Cook Time: 40 mins

Ingredients

  • 1 tablespoon szechwan pepper
  • 2 tablespoons kosher salt
  • 2 lbs fresh fat duck hindquarters (about 4)
  • 6 -7 cups freshly rendered duck fat
  • 1 head garlic, smashed
  • 1/2 orange zest, of scrubbed and finely pared
  • 1 1/2 star anise, broken into points
  • 8 slices fresh ginger, smashed (quarter-sized coins)
  • 1/4 teaspoon whole coriander seeds or 1/4 teaspoon fennel seed, crushed
  • 4 scallions, cut into 1 inch nuggets and smashed

Recipe

  • 1 combine the peppercorns and salt in a heavy skillet and toast over moderate heat, stirring, until the salt turns off-, about 5 minutes.
  • 2 adjust the heat so the peppercorns do not burn, but expect them to smoke.
  • 3 let the mixture cool slightly, then run through a spice grinder or food processor until you get a very fine powder.
  • 4 sieve to get rid of any husks from the peppercorns.
  • 5 set aside.
  • 6 sprinkle about 1/3 (about 1 tbl.) of the pepper-salt generously over the duck legs, massaging it well into the skin.
  • 7 save the rest of the pepper-salt for another use.

  • 12 of the duck fat and swirl to glaze the bottom of the pan.
  • 13 add the duck legs in a single layer and brown on both sides.
  • 14 adjust the heat so the skin browns without scorching and drizzle in a bit more fat if needed.
  • 15 remove the pot from the heat and carefully drain off any burned fat.
  • 16 return the pot and seared duck legs to moderate heat.
  • 17 add the duck fat and the confit seasonings.
  • 18 nudge the legs from the bottom while the mixture comes to a gentle simmer, then adjust the heat so that the fat does not boil.
  • 19 simmer uncovered until the duck is very tender at it's thickest part and almost falling off the bone, about 40 minutes.
  • 20 use tongs to carefully transfer the legs to a shallow container.
  • 21 let the fat cool until tepid, about 30 minutes, then carefully strain over the duck legs.
  • 22 discard the solids.
  • 23 arrange the legs so they are completely submerged in the fat, and place, uncovered, in the refrigerator.
  • 24 once the fat congeals, cover the container tightly.
  • 25 in this state, the confit can be stored for 1 day to 2 weeks before using.
  • 26 to serve, warm the container over low heat or in a slow oven until the fat turns liquid, then remove the legs.
  • 27 strip the legs of skin, then pull the meat from the bone in shreds.
  • 28 discard the skin, bones and any cartilage.
  • 29 the meat is best when just taken from the bone, but you can store it in the refrigerator in shreds, just warm to room temperature before using.
  • 30 you may have to adjust the seasonings with more pepper-salt.
  • 31 the seasoned duck fat can be frozen indefinitely.
  • 32 strain through several layers of dry cheesecloth to trap excess pepper-salt, then seal and freeze for your next batch of confit.
  • 33 on the second go-round you won't need to season the duck fat, but you will need to add 2 cups of fresh duck fat to the pot in order to cover the same amount of legs.

Country Sliced Strawberry Salad With Goat Cheese And Pine Nuts

Recipe

  • 1 dressing: combine all ingredients. gently toss strawberries with 1/2 cup dressing. reserve remaining dressing for another use.
  • 2 salad; arrange spinach leaves on a platter. top with strawberries, crumbled goat cheese and pine nuts and garnish with mint. serve immediately.

  • 1 (7 1/2 ounce) can crabmeat or 7 1/2 ounces picked fresh crabmeat
  • 1 cup sour cream
  • 1/2 cup shredded swiss cheese
  • 1/2 envelope dry onion soup mix
  • melba toast or toasted bread round

  • 1 mix crab meat, sour cream, cheese, and soup mix.
  • 2 spread on toast rounds.
  • 3 heat under broiler for 4 to 5 minutes.

  • 1/2 teaspoon onion, chopped

  • 1 preheat oven to 350 degrees.
  • 2 spray an au gratin dish or small oven proof individual baking dish with cooking spray.
  • 3 crack egg into the dish and add the rest of the ingredients.

Chicken Salad With Mint And Feta

Ingredients

  • 3 cups cooked boneless skinless chicken breasts, chopped
  • 1/2 cup yellow bell pepper, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup english cucumber, cubed
  • 2 ounces feta cheese, crumbled (1/2 cup)
  • 1/4 cup fresh mint, chopped
  • 1 1/2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • mint sprig, garnish (optional)

  • 1 combine all ingredients except mint sprigs in a large bowl; toss gently to combine.

Ingredients

  • 1 cup chopped imitation crabmeat
  • 1 cup hellmans mayonnaise
  • 1 cup diced onion
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon liquid smoke (hickory flavoring)
  • 1 tablespoon tabasco sauce or 1 tablespoon frank's red hot sauce
  • 1 teaspoon dill
  • 1 round crusty bread (boule, bowl-type bread)

Recipe

  • 1 mix all ingredients, except bread bowl, in a large ovenproof casserole dish.
  • 2 bake at 350 degrees, uncovered, for 35 to 40 minutes, stirring every 10 minutes, until all the cheese is melted.
  • 3 remove from oven.
  • 4 cut center out of bread to form a bowl.
  • 5 save the pieces to use for dipping.
  • 6 place in oven for 10 to 15 minutes to"dry" the inside and make it hard.
  • 7 meanwhile, remove any grease that has accumulated on the top of the dip.
  • 8 remove the bread bowl from oven and place it on a sturdy platter.
  • 9 pour the dip mixture into the bread bowl.
  • 10 place chunks of bread from center that have already been removed around the base of the dip to use for dipping.
  • 11 serve hot.

California Bbq Chicken Pizza

Ingredients

  • Servings: 6
  • 1 -2 boneless skinless chicken breast
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 red onion, sliced in thin strips
  • 1/2-1 cup barbecue sauce
  • 1/2 cup cilantro, chopped
  • 1 (6 ounce) can crushed pineapple, drained
  • 8 ounces shredded mozzarella cheese
  • 1 recipe pizza dough (i use nonfat pizza dough (bread machine)) or 1 boboli pizza crust, crust (i use nonfat pizza dough (bread machine))

Recipe

  • 1 sauté chicken with garlic and onion in olive oil for 2-3 minutes.
  • 2 add 1/2 cup bbq sauce and continue to cook until chicken is done. cool slightly.
  • 3 prepare dough, if using.
  • 4 brush dough with additional bbq sauce.
  • 5 cover with about 4 ounces of cheese.
  • 6 top with chicken, pineapple, cilantro and remaining cheese.
  • 7 bake at 500º for about 10 minutes or until cheese is bubbly.
  • 8 (if using boboli crust, follow package directions).

  • 8 ounces surimi
  • 2 scallions, and green part
  • 4 ounces cream cheese, softened
  • 1/4-1/2 cup sour cream
  • 1 -2 tablespoon barbecue sauce
  • 3/4 teaspoon lemon juice
  • 1/2-3/4 teaspoon worcestershire sauce

Recipe

  • 1 using a food processor, chop scallions till finely chopped.
  • 2 add surimi and pulse till finely chopped.
  • 3 make sure you don't pulse too much or you'll lose all the texture.
  • 4 remove to a bowl and blend in remaining ingredients.
  • 5 start with the lower amount of sour cream,worcestershire sauce and bbq sauce.

Country Strata With Sausage, Fontina And Rosemary

Ingredients

  • 8 ounces turkey sausage, casings removed
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, chopped into 1/2 inch pieces (about 1 cup)
  • 1/2 loaf egg bread or 1/2 loaf country bread, cut into 1/2 inch-thick slices (preferably 1 to 2 days old)
  • 1 tablespoon chopped fresh rosemary
  • 2 cups heavy cream
  • 1/2 cup half-and-half
  • 8 eggs
  • 1 1/2 teaspoons salt
  • 1 teaspoon fresh ground black pepper
  • 2 tomatoes, sliced into 1/4 inch slices
  • 12 ounces fontina or 12 ounces swiss cheese, grated (4 cups)

Recipe

  • 1 butter the bottom and sides of a 9" x 13" or 8" x 12" baking dish.
  • 2 in a large skillet over medium heat, break up sausage and sauté with olive oil and onion until golden brown, about 10 to 12 minutes.
  • 3 remove from heat and set aside.
  • 4 meanwhile, if using fresh bread, lightly toast and set aside.
  • 5 in a medium bowl, whisk rosemary, cream, half-and-half, eggs, salt, and pepper, and set aside.

  • 1/2 cup sliced black olives (extra may be offered for garnish)
  • 1 (4 ounce) can diced green chilies
  • 12 corn tortillas, quartered
  • 2 cups small curd cottage cheese
  • 1 egg
  • 8 ounces sliced monterey jack cheese
  • 1 cup grated cheddar cheese
  • sour cream (optional)
  • extra sliced black olives (optional)
  • chopped green onion (optional)

Recipe

  • 1 preheat oven to 350°; grease (or spray with non-stick pan spray) a 3qt casserole dish; set aside.
  • 2 in large skillet, saute beef with onion and garlic over medium heat (in batches if necessary) and drain; sprinkle chili powder over meat and mix well.
  • 3 add tomato sauce, sugar, salt, olives, and green chiles; simmer over very low heat for 15 minutes.
  • 4 beat cottage cheese and egg together until blended.
  • 5 in bottom of 3qt casserole dish, spread 1/3 of meat; layer with half of jack cheese, half cottage cheese& egg, half tortillas, then next 3rd of meat.
  • 6 continue layering with remaining jack cheese, c/c, remaining tortillas, ending with remaining 1/3 meat; sprinkle top with cheddar cheese.
  • 7 bake, uncovered, at 350° until thoroughly heated and cheese is melted; serve with sour cream, sliced black olives and green onion if desired (recommended).

Deb's Chicken Tetrazzini

  • 1 whole broiler-fryer chicken, cooked and shredded
  • 1 lb linguine, cooked per package directions
  • 2 tablespoons flour
  • 4 tablespoons butter, divided
  • 8 slices american cheese
  • 1 1/4 cups heavy cream
  • salt and pepper (lots of pepper is what i like)
  • 1 cup parmesan cheese
  • 2 tablespoons sherry wine
  • 1 cup chicken broth

Recipe

  • 1 preheat oven to 350*f. in saucepan, melt 2 tbsp butter. add the flour and stir to thicken. add the chicken broth, salt, pepper and sherry. bring to boil, then stir continuously 3-5 minutes until a nice sauce forms. add the cream, stir another 3-5 minutes.
  • 2 add chicken to the mixture, stir til warm and coated.
  • 3 butter a 9x13 pan. pour linquine into bottom of pan to cover it. pour your chicken/sauce mixture over the top - spreading to cover the pasta. dot the top with the rest of butter. sprinkle parmesan on top. put slices of american cheese on top. bake, uncovered, 30-45 minutes, until top is browned and bubbling.

Creamy Dill Dressing

  • 1 1/4 cups mayonnaise
  • 1/2 cup sour cream
  • 1/3 cup chopped fresh dill
  • 1/4 cup freshly grated parmesan cheese
  • 3 tablespoons fresh lemon juice

  • 3 cloves garlic, minced
  • 2 teaspoons worcestershire sauce

Recipe

  • 1 whisk mayonnaise and sour cream in a medium bowl until smooth.
  • 2 stir in remaining ingredients.
  • 3 season with salt and pepper.
  • 4 cover; chill 1 hour to blend flavors.

Crab Dip

  • 1 clove garlic, minced
  • 2 -3 ounces cream cheese
  • 1/4 cup mayonnaise
  • 1/2 cup minced chives
  • 1/8 teaspoon salt
  • 1/4 teaspoon worcestershire sauce
  • 6 -8 ounces crabmeat
  • 2 drops tabasco sauce
  • 1/2 cup light cream
  • 1 teaspoon minced onion
  • 2 teaspoons lemon juice

Recipe

  • 1 cream together mayonaise, cream cheese, garlic, chives, salt and worcestershire sauce.
  • 2 add lemon juice, tobasco, cream and onion.

Baked Macaroni & Cheese

Ingredients

  • 16 ounces velveeta cheese
  • 1 1/2 cups milk
  • 3 tablespoons margarine
  • 1 tablespoon flour
  • salt & pepper
  • 16 ounces shredded monterey jack and cheddar cheese blend
  • 16 ounces shredded colby-monterey jack cheese
  • 16 ounces macaroni noodles
  • 1 egg
  • paprika

Recipe

  • 1 boil the macaroni noodles.
  • 2 while the noodles are boiling, create a cheese sauce by combining the velveeta cheese, milk, margarine, flour and salt & pepper in a sauce pan heat while stirring until everything is melted together.
  • 3 drain the noodles and combine the cheese sauce with the cooked macaroni.
  • 4 once the noodles and cheese sauce are mixed well, grease a baking pan.
  • 5 layer in the shredded cheese and the macaroni mixture.until you run out of noodles. (be sure to leave enough shredded cheese to cover the top layer of noodles completely.
  • 6 beat the egg and pour it over the top.
  • 7 sprinkle the paprika over the top.
  • 8 cover tightly with aluminum foil and bake in over at 375 degrees for 30 minutes.
  • 9 take the aluminum foil off, turn the oven up to 425 degrees and cook for another 5 minutes or until the top is browned.
  • 10 enjoy!

Cherry Jello Salad

  • 6 ounces sugar-free cherry gelatin
  • 3 ounces fat free cream cheese
  • 1 cup crushed pineapple
  • 1 (16 ounce) can cherries, packed in water
  • 1/2 cup pecans, chopped
  • 1 cup mini marshmallows
  • 20 ounces diet coke

Recipe

  • 1 seperate the pineapple and cherry juice from the fruit. use the juice and water as needed to create 2 cups of liquid. bring liquid to a boil, remove from heat and add jello packets. stir untill dissolved completely.
  • 2 wisk in cream cheese until well blended. stir in diet coke, crushed pineapple, and cherries. refridgerate for 1 hour.
  • 3 before the jello fully sets, stir in chopped pecans. put jello salad into a pretty dish and place the mini marshmallows on top. refridgerate over night or until it is completely set.

Dead Good Spaghetti Carbonara

  • 8 ounces spaghetti
  • 1 tablespoon butter
  • 1 small onion, finely chopped (may use shallots)
  • 2 garlic cloves, finely chopped
  • 6 slices bacon, chopped
  • 2 eggs
  • 5/8 cup cream
  • 1 ounce parmesan cheese, finely grated
  • salt and black pepper, to taste

Recipe

  • 1 boil a large pan of water and cook the pasta following the packet instructions.
  • 2 meanwhile, heat butter in a small frying pan and cook the onions, garlic and bacon for 5-7 minutes until golden.
  • 3 beat together the eggs, cream, most of the parmesan and plenty of ground black pepper.
  • 4 drain the spaghetti and return to the pan, off the heat.
  • 5 add the onion and egg mixtures and toss together until the pasta is evenly coated.
  • 6 serve with the rest of the parmesan sprinkled on top.
  • 7 add black pepper and salt if desired.

California Bacon Ranch Pizza #rsc

  • 2 teaspoons olive oil
  • 3/4 lb boneless skinless chicken breast, cut into 1/2 inch cubes
  • 1 tablespoon lemon zest

  • 1/2 cup mashed fresh avocado
  • 1 1/2 teaspoons lemon juice
  • 1 (1 ounce) package hidden valley original ranch dips mix
  • 1/4 cup mayonnaise
  • 1/3 cup plain greek yogurt
  • 8 ounces whipped cream cheese
  • 1 lb pizza dough
  • 1/2 cup red onion, diced
  • 4 slices cooked bacon, crumbled
  • 3 fresh tomatoes, seeded and diced

Recipe

  • 1 pre-heat oven to 350°f.
  • 2 in a heavy skillet, heat olive oil. while oil is heating, season chicken with salt, pepper, and lemon zest. stir well to combine.
  • 3 brown chicken in skillet until no longer pink, 6-7 minutes on medium high. remove chicken with a slotted spoon and drain on paper towels. set aside and keep warm.
  • 4 mix together avocado, lemon juice, ranch dip mix, mayonnaise, greek yogurt and cream cheese. set aside to flavor for 5-10 minutes.
  • 5 while avocado ranch sauce is sitting, spread pizza dough out onto a large (16 inch) pizza pan bake pizza crust 6-7 minutes or until just starting to brown on top. remove from oven.
  • 6 spread avocado ranch sauce generously onto warm crust. sprinkle cooked chicken, diced red onion, bacon pieces and diced tomatoes on top of ranch sauce. top with both cheeses.

  • 2 (7 1/2 ounce) cans pillsbury buttermilk biscuits
  • 1/2 cup butter or 1/2 cup oleo, melted and divided

  • 4 ounces cream cheese, room temperature
  • 1/2 cup powdered sugar
  • 1 -2 tablespoon milk, until desired consistency

Recipe

  • 1 cut biscuits into bits.
  • 2 mix sugar and cinnamon; roll biscuit bit in mixture.
  • 3 put half the biscuits into lightly greased bundt pan.
  • 4 drizzle with half the butter or oleo.

  • 1 (4 -7 ounce) can green chilies, chopped
  • 1 (10 ounce) can rotel tomatoes (or tomato and chili mix)
  • 1 (6 ounce) can tomato paste
  • 2 -3 potatoes, peeled and finely diced
  • 4 -6 tablespoons vinegar
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

  • 1/4-1 cup water (added as needed during cooking)

Chicken Mediterranean Cruise

  • 1 1/2 lbs skinless chicken thighs, fat removed

  • 3/4 cup green pepper, chopped (1 medium)
  • 3 garlic cloves, minced
  • 1/3 cup celery, chopped
  • 1/4 cup pimiento stuffed green olive, sliced
  • 10 ounces canned diced tomatoes and green chilies (rotel tomatoes)
  • 14 1/2 ounces canned fire-roasted tomatoes, diced or 14 1/2 ounces canned diced tomatoes
  • 1 1/4 cups lager beer (drink whatever is left from the bottle or can)
  • 1 teaspoon basil
  • 1 teaspoon paprika
  • 2 teaspoons sugar
  • 1 teaspoon salt

  • 1 shake chicken thighs in a plastic bag with flour, salt and pepper. keep unused flour in the bag.
  • 2 with a medium heat, saute chopped bacon in 2 t olive oil until lightly browned in a frying pan. remove bacon pieces and place in a crock pot. keep oil in the pan.
  • 3 saute chicken pieces in the same frying pan 3 minutes each side until lightly browned. do not overcook. remove chicken pieces and place in a crock pot.
  • 4 in the same frying pan, saute leek, green pepper, celery, and garlic for 2-3 minutes. add remaining flour from the bag. saute 2 more minutes. place the mixture into the crock pot.
  • 5 add sliced green olives, diced tomatoes and green chilies (rotel tomatoes), canned fire roasted tomatoes or canned chopped tomatoes, lager beer, basil, paprika, sugar, 1 tsp salt, and parmesan cheese.
  • 6 with a microplane grater or grater, grate 1/2 orange peel into the crock pot. pare and section oranges and place the sectioned oranges into the crock pot.
  • 7 cover the crock pot. cook for 4 hours on medium heat (i'm using a slow cooker and the heat is higher). with regular crock, cook for 6 hours.
  • 8 skim any fat floating on the surface.
  • 9 serve over cooked rice or simply serve with crusty well buttered country bread.

  • 1/2 cup mole, poblano paste
  • 2 cups chicken broth
  • 2 cups shredded cooked chicken
  • nonstick cooking spray
  • 8 corn tortillas
  • 2 cups shredded mexican blend cheese or 2 cups monterey jack cheese

Recipe

  • 1 preheat oven to 375 degrees. in a saucepan over medium high heat, stir together mole paste and about half of the broth.
  • 2 once mixture is smooth, stir in remaining broth and chicken. heat until simmering.
  • 3 spray a 9-inch pie plate with non-stick cooking spray. place two tortillas, overlapping, on bottom of pie plate. (tortillas won't completely cover the bottom; that's ok.).
  • 4 top with 1/4 of the chicken and sauce and 1/4 of the cheese. continue layering, ending with sauce and cheese.
  • 5 bake about 25 minutes, until cheese is melted and sauce is bubbling. cut in wedges to serve.

  • 3 lbs cream cheese, softened (some of cheese can be fat free or low-fat)
  • 2 lbs backfin crab meat
  • 1 (12 ounce) bottle heinz chili sauce
  • 1 teaspoon old bay seasoning
  • 1 teaspoon hot sauce
  • 3 tablespoons horseradish (not horseradish sauce)
  • 3 tablespoons oscar meyer bacon bits
  • 1 cup toasted almond
  • 2 packages bread mix
  • 2 cups water

Recipe

  • 1 if you purchase bakery round bread, omit the next few steps.
  • 2 bread bowl:mix both bread mixes together according to manufacturer's instructions.
  • 3 let rise until double in bulk.
  • 4 with non-stick cooking spray, spray the inside of a 9" or 1" springform pan.
  • 5 knead dough and place in pan, pressing down as evenly flat as possible.
  • 6 let rise 1 to 2 hours until dough reaches the top of the pan.
  • 7 bake about 50-65 minutes at 350 degrees, until completely cooked.
  • 8 run knife around edge of loaf, and let cool completely.
  • 9 remove outer pan rim.
  • 10 cut a thin top layer from the bread and remove most of the bread inside, leaving a"shell" of bread to form your bowl.
  • 11 place bread on serving tray (large enough to hold crackers or bread cubes around it).
  • 12 dip:in mixer, mix cream cheese with all other ingredients except chili sauce and crab.
  • 13 when well blended, add chili sauce and mix until blended.
  • 14 gently stir in crab meat.
  • 15 spoon into shallow baking dish and bake until warm in the center.
  • 16 cool until not hot to the touch.
  • 17 spoon crab dip into bread bowl on serving tray; sprinkle bacon and almonds on top, and surround with assorted crackers and a few sprigs of greenery for garnish.
