Cannoli

Ingredients

  • 3 cups good quality ricotta cheese
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup bittersweet chocolate chips
  • 1/4 cup confectioners' sugar
  • prepared cannoli shells

Recipe

  • 1 whip ricotta with electric mixer until light and fluffy.
  • 2 add sugar and mix until dissolved.
  • 3 add extracts.
  • 4 fill shells with a pastry bag or ziplock bag with a hole cut out of a corner.
  • 5 dip ends in chips.
  • 6 dust with confectioners' sugar and serve on a doily.
  • 7 enjoy!
