Chicken 'n Peaches

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 whole boneless skinless chicken breasts
  • salt and pepper
  • 1/4 cup butter
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons paprika
  • 1 (28 ounce) can peaches, drained,rinsed,drained again and sliced
  • 1 1/2 cups sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup freshly grated parmesan cheese

Recipe

  • 1 slice chicken into strips.
  • 2 season with salt and pepper.
  • 3 set aside.
  • 4 in medium bowl, mix together sour cream and mayonnaise.
  • 5 set aside.
  • 6 melt 2 tbsp butter in medium frying pan.
  • 7 stir-fry chicken strips for about 3 minutes or until no longer pink inside.
  • 8 set aside and keep warm.
  • 9 heat remaining butter in same pan.
  • 10 cook onions and garlic until softened but not browned.
  • 11 add cooked chicken and paprika.
  • 12 stir to combine.
  • 13 place in a single layer in a 7 by 11 inch broiler-proof baking pan.
  • 14 top with sliced peaches, then sour cream mixture.
  • 15 bake in preheated 350f degree oven for about 15 minutes or until heated through.
  • 16 sprinkle with parmesan cheese and broil on low for about 5 minutes or until flecked with brown.
  • 17 serve over cooked rice.
