Crackers With Cheese

Ingredients

  • Servings: 8
  • 1 lb ground beef
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 (15 ounce) cans diced tomatoes
  • 1 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • salt and pepper
  • 1 (4 ounce) can chopped green chilies
  • 1 dozen corn tortilla
  • 2 lbs monterey jack cheese, grated
  • 1 pint sour cream

Recipe

  • 1 sauté onions, meat, and garlic until onions are clear.
  • 2 drain any fat.
  • 3 add tomatoes, spices, salt and pepper and simmer 30 minutes.
  • 4 add diced chilies.
  • 5 cut tortillas into fourths.
  • 6 in a 13x9x2-inch pan, layer half of tortillas, overlapping to cover the bottom of pan.
  • 7 cover with half the meat sauce.
  • 8 sprinkle with half the cheese.
  • 9 repeat layers, beginning with tortillas and ending with cheese.
  • 10 bake at 350°f about 30-45 minutes, or until bubbling and cheese has melted and started to turn golden.
  • 11 remove from oven and spread with a layer of sour cream.
  • 12 this freezes well--do all but add sour cream topping and freeze.
  • 13 when ready, reheat and top with sour cream.

Chili-lime Chicken And Mexi-ranch Salad

Ingredients

  • 3 ounces romaine lettuce, chopped
  • 1/4 cup chicken breast, marinated and grilled (cut into strips or diced, whichever you prefer)
  • 1/4 cup tomato, diced
  • 2 tablespoons black olives, pitted and sliced
  • 1/4 avocado (sliced or diced)
  • 1/4 cup black bean salsa, drained well (i use bek's black bean salsa/pico de gallo)
  • 1 tablespoon cheddar cheese, grated (use your favorite mexican blend)
  • 1 tablespoon green onion, sliced (optional)
  • tortilla chips
  • 1 tablespoon ranch dressing
  • 2 tablespoons salsa

Recipe

  • 1 to make the salsa ranch dressing, mix 1 part ranch dressing with two parts salsa. if you like more dressing, of course, you can increase the amounts, just keep the ratio. taste as you go to get it to your preference!
  • 2 to make the salad, layer the salad ingredients however you prefer your salad to look - make it pretty! the tortilla chips may either be crushed and sprinkled on top or served on the side. serve with salsa ranch dressing. enjoy!

Baked Ricotta With Lemon, Garlic, & Chives

Ingredients

  • 15 ounces whole milk ricotta cheese (about 2 cups)
  • 1 large lemon, zested and juiced
  • 2 large garlic cloves, minced
  • 1 ounce fresh chives, minced (about 1/2 cup)
  • 1/2 teaspoon salt
  • fresh ground black pepper
  • extra-virgin olive oil

Recipe

  • 1 heat the oven to 375°f lightly grease a 1/2- to 1-quart gratin dish or baking pan.
  • 2 mix the ricotta, lemon juice and zest, garlic, chives, and salt, and a generous quantity of fresh black pepper. spread in the baking dish and drizzle with olive oil. (at this point you can cover and refrigerate the ricotta overnight, if desired.)
  • 3 bake for 15 to 20 minutes or until hot. drizzle again with olive oil. serve immediately with crackers for dipping.

Chiliquilla

Ingredients

  • Servings: 4
  • 8 ounces ground beef
  • 4 tablespoons margarine (divided)
  • 8 (6 inch) corn tortillas, torn into strips
  • 3 eggs, beaten
  • 3/4 cup canned mild enchilada sauce
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onion
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • cheese

Recipe

  • 1 brown ground beef in a large skillet over medium-high heat. drain, remove from pan and set aside.
  • 2 melt 2 tablespoons of margarine in the skillet. add torn tortillas and brown lightly. push the tortillas all the way to the outside edge of the pan.
  • 3 add the remaining 2 tablespoons of margarine to the center and melt.
  • 4 pour in the beaten eggs and scramble until soft set. push the eggs to the outside edge of the pan.
  • 5 add the browned ground beef to the center of the pan.
  • 6 pour the enchilada sauce over and mix lightly.
  • 7 reduce heat to a simmer.
  • 8 sprinkle the black olives and green onions over the meat mixture; cover and simmer 10 minutes.
  • 9 remove cover and spoon several dollops of sour cream over the dish, then sprinkle evenly with shredded cheese.
  • 10 replace cover and simmer for an additional 5 minutes, or until the cheese is melted.

Basic Pie & Pastry Crust + Tips & Tricks

  • 3 cups flour
  • 1 cup shortening
  • 1/2 teaspoon salt
  • 1/2-2/3 cup very cold water

Recipe

  • 1 cut shortening into flour/salt until it looks like peas.
  • 2 add very cold water all at once and quickly toss with a fork; shape into a ball being careful not to over knead.
  • 3 divide dough in half and roll thin.
  • 4 this makes two single piecrusts or one double crust pie.
  • 5 tips and tricks:.
  • 6 to avoid a soggy crust, try brushing the bottom of the crust with egg before adding fruit; filling the shell *just* before baking also helps prevent sogginess; sogginess can also be caused from the oven temperature being too low or the time too short.
  • 7 for a flakier upper crust, brush lightly with cold water before popping in the oven; also keep ingredients and dough cold until baked.
  • 8 to prevent the crust from shrinking, avoid stretching the dough as you roll it and avoid stretching it when placed in the pie plate; allowing the pie shell to rest about 30 minutes before baking will also help prevent shrinking.
  • 9 never shake the flour while placing in the measuring cup; instead, level it with the back of a knife.
  • 10 toss ingredients with a fork, lightly and quickly, rather than stirring.
  • 11 don't use too much water; about 1/2 c of iced water to 2 cups of flour.
  • 12 to prevent burning of the crust, try baking the pie in a large paper bag stapled closed, being sure that it doesn't touch any part of the oven; or use an oven- roasting bag.
  • 13 try rolling some grated cheese into the dough when making an apple pie.
  • 14 try adding toasted slivered almonds to piecrust that you intend to fill with a cream filling or cherry filling.

  • 16 slices pancetta, thin sliced
  • 16 apples, wedges (from 2 apples)
  • 8 ounces manchego cheese, cut into 16 equal slices
  • rosemary sprigs or toothpick

  • 1 on a work surface, lay out the pancetta slices; top each with an apple wedge and slice of cheese.
  • 2 roll up pancetta and secure with a rosemary sprigs or toothpicks.

  • 1 1/2 cups fresh basil
  • 1/3 cup olive oil
  • 1 cup pine nuts
  • 1 -5 garlic clove
  • 1/4 cup parmesan cheese

  • 1 put all ingredients in a blender; blend until nuts are ground. pesto is best to not be completely smooth; a little texture is good. add salt to taste.
  • 2 adjust amounts to your own taste. you can use other herbs besides basil; cilantro, parsley and mint are good too. substituted walnuts or almonds in place of the pine nuts, as they can be expensive. add a dash of salt to taste.
  • 3 pesto keeps very well and is delicious the next day and it freezes well, too.

Creamy Mexican Bake

  • 350 g lean ground beef
  • 2 teaspoons oil
  • 1 garlic clove, crushed
  • 125 g mixed beans, drained
  • 400 g chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 red chili, chopped (optional)
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 3/4 cup polenta
  • 1/2 cup boiling water
  • 375 ml evaporated milk (light and creamy)
  • 1 egg
  • 3/4 cup cheddar cheese (low fat)

Recipe

  • 1 preheat the oven to 200 degrees celsius.
  • 2 brown the beef with the oil and garlic.
  • 3 add the next six ingredients, stir until the mixture boils, then simmer for 15 minutes. spoon the mixture into four 1 cup ( 250ml) ovenproof bowls ( or one large one!).
  • 4 combine the polenta with the boiling water in a large bowl, add the remaining ingredients, beat to combine and allow to stand for 10 minutes.

Ingredients

  • 1 (16 ounce) package frozen hash browns
  • 12 eggs
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1/2 lb bulk lamb sausage, browned and drained
  • 12 (10 inch) flour tortillas (warmed )
  • 3 cups shredded cheddar cheese

Recipe

  • 1 in large skillet, fry hash browns according to directions.
  • 2 remove and set aside.
  • 3 in large bowl, beat eggs; add onions and green peppers.
  • 4 pour in same skillet.
  • 5 cook and stir until eggs set.
  • 6 remove from heat.
  • 7 add hash browns and sausage. mix gently.
  • 8 place about 3/4 cup on each tortilla and top with 1/4 cup cheddar cheese.

Chamomile Lavender Mint Iced Tea

Ingredients

  • 1 loosely packed cup fresh mint leaves
  • 2 tablespoons dried culinary lavender
  • 1 1/2 tablespoons dried chamomile (or 4 chamomile tea bags)

Recipe

  • 1 crush mint leaves and put in a 1-gal. lidded jar. add lavender and chamomile.
  • 2 fill jar with water to within 2 inches of rim. cover and refrigerate 6 hours. pour through a cheesecloth-lined colander into pitcher for serving.

  • 1 (1 1/4 ounce) package chili seasoning mix
  • 1 (8 ounce) can tomato sauce
  • 1 (8 ounce) can black beans, drained and rinsed

  • 1 cup shredded cheddar cheese
  • 1 (7 ounce) package tortilla chips

  • 1/2 lb ground beef
  • 1/4 cup chopped onion
  • 1 (4 ounce) can green chilies
  • 2 ounces sharp american cheese, shredded (1/2 cup)
  • 3/4 cup cold milk
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 dash pepper
  • 2 beaten eggs
  • 1 dash hot sauce

Recipe

  • 1 in skillet, brown beef and onion; drain off excess fat.
  • 2 sprinkle meat with 1/4 teaspoon salt and dash pepper.
  • 3 split chilies lengthwise and remove seeds; spread open.
  • 4 lay half of chilies on bottom of a shallow 1-quart baking dish.
  • 5 sprinkle with cheese; top with meat mixture.
  • 6 arrange remaining chilies over meat.
  • 7 gradually add milk to flour, stirring till smooth.
  • 8 add salt, pepper, eggs, and hot sauce; beat till smooth.

Blood Orange Liqueur

  • 4 blood oranges
  • 1 lemon
  • fresh ginger, 2-inch piece peeled and sliced
  • 2 cups vodka
  • 1 1/2 cups simple syrup

Recipe

  • 1 make simple syrup by heating 2 1/2 cups water and 3 cups sugar in a saucepan over medium heat until it comes to a boil. lower heat and simmer 5 minutes. let cool before using. any extra will keep in the refrigerator for a month or so, and is good for sweetening iced tea, etc.
  • 2 wash, dry and peel the zest from the oranges and lemons, being careful not to take any of the pith. place in a large glass jar.
  • 3 remove pith from two of the oranges. cut up the fruit and add to the jar. (you will not use the remaining oranges in this recipe).
  • 4 stir to smash the fruit a bit, add the vodka, ginger and lemon and seal the jar.
  • 5 place in a cool, dry spot, away from sunlight for two weeks, swirling it about occasionally.
  • 6 stir in the simple syrup, reseal, and again set aside for two weeks, swirling occasionally.
  • 7 strain the liqueur.
  • 8 filter it through a double layer of cheesecloth into a pitcher.
  • 9 filter a final time through 2 new layers of cheesecloth into the final bottle.

Avocado, Cheddar, And Tomato Omelet

  • 1 in a small bowl, whisk together eggs, water, salt and pepper.

Craig Claiborne's Walnut And Ginger Cake

Ingredients

  • 1 lb butter, cut into 1-inch cubes
  • 3 cups sifted all-purpose flour
  • 1/2 lb candied ginger, cut into 1/4-inch cubes (about 1 cup)
  • 1/2 lb golden raisin (about 1 1/2 cups)
  • 1 lb walnuts, preferably black walnuts, broken into pieces (about 3 3/4 cups)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt, if desired
  • 2 cups sugar
  • 6 egg yolks (about 1/3 cups)
  • 1/3 cup madeira wine or 1/3 cup sweet sherry
  • 6 egg whites (about 1 cup)
  • madeira wine (optional) or dry sherry (optional) or cognac (optional) or rum (optional)

Recipe

  • 1 preheat oven to 275 degrees f.
  • 2 lightly butter inside of a 10-inch, 12-cup bundt pan. sprinkle with flour and shake out excess.
  • 3 in a mixing bowl combine the ginger, raisins and walnuts.
  • 4 sift together 3 cups flour, baking powder, and salt. sift this mixture over ginger-and-nut mixture.
  • 5 put 1 pound butter into the bowl of an electric mixer. start beating while gradually the sugar. cream mixture well and gradually beat in yolks. beat.
  • 6 in 1/3 cup madeira.
  • 7 pour and scrape this mixture over nut mixture, and blend the ingredients thoroughly. this is best done by hand.
  • 8 beat egg whites until stiff, and fold into the batter thoroughly, until they do not show.
  • 9 pour the batter into the prepared pan and smooth over top with spatula. set pan on baking sheet and place in oven. bake about 2 1/4 hours, or until cake is puffed above pan and nicely browned on top, or until internal temperature is 200 degrees f. on thermometer.
  • 10 remove from pan shortly after baking. tapping bottom of pan with heavy knife will help. store cake for at least 10 days. if desired, add occasional touch or more of madeira, dry sherry, cognac or rum. keep closely covered, wrapped in cheesecloth and foil, and refrigerated until ready to use.

Cinnamon Sugar Graham Cupcakes

  • 1 tablespoon baking powder
  • 3/4 teaspoon salt

  • 1/2 cup graham cracker crumbs
  • 1/2 cup brown sugar, packed

  • 1 (8 ounce) package cream cheese, room temperature
  • 1/2 cup unsalted butter, room temperature
  • 1 teaspoon madagascar bourbon vanilla extract
  • 1 tablespoon ground cinnamon

  • 2 cups confectioners' sugar, sifted

  • 1 preheat the oven to 350ºf. line mini cupcake pans with 72 mini cupcake liner or line a regular-size cupcake or muffin pan with 24 cupcake liners.
  • 2 sift together the cake flour, baking powder, and salt into a bowl, and set aside.
  • 3 combine the graham crackers crumbs and brown sugar in a small bowl and pour in the melted butter. stir until combined, and set aside.
  • 4 in the bowl of an electric mixer fitted with a paddle attachment, beat the butter on medium speed until creamy. gradually add the sugar and beat about 3 minutes more, or until light and fluffy. scrape down the sides of the bowl. reduce the speed to low and add the egg yolks one at a time, beating well after each addition. scrape down the sides of the bowl. beat in the vanilla extract and cinnamon. on low speed, mix in 1/3 flour mixture and 1/2 the milk, repeating alternating between the flour and milk, beginning and ending with the flour mixture. mix just until the flour is incorporated. do not overbeat once the flour mixture is added. scrape down the sides of the bowl.
  • 5 with an electric hand mixer, beat the egg whites until medium-stiff peaks form and fold into the batter. fold in the graham cracker-brown sugar mixture. scoop the batter into the lined mini cupcake pan or regular-size cupcake pan. bake 22 minutes for mini cupcakes or 27 minutes for regular-size cupcakes, or until a cake tester comes out clean. cool the cupcakes completely before frosting.
  • 6 cinnamon sugar graham cream cheese icing:.
  • 7 combine the graham cracker crumbs and brown sugar in a small bowl and pour in the melted butter. stir until combined and set aside.
  • 8 in the bowl of an electric mixer, fitted with the paddle attachment, beat together the cream cheese and butter on medium speed until smooth. beat in the vanilla extract, cinnamon, and salt. reduce the speed to low, and add the confectioners' sugar until well blended. increase the speed to high and beat about 3 minutes more, or until light and creamy. fold in the graham cracker-brown sugar mixture. place the icing in a pastry bag fitted with a pastry tip. pipe the icing on the cooled cupcakes. garnish the cupcakes with graham cracker crumbs, a piece of cinnamon sugar graham cracker, and a sprinkling of cinnamon.

  • 1 combine the mayonnaise, sugar, champagne, and vinegar. whisk together until blended.
  • 2 combine the salad dressing (above) , chicken, apples, pears in a bowl, and mix well. serve over lettuce. sprinkle with feta cheese.

Creamy Mexican Chicken

Ingredients

  • Servings: 8
  • 2 -3 cups chicken, cooked and shredded
  • 1 onion, chopped
  • 1 tablespoon oil
  • 2 tablespoons flour
  • 1 (4 ounce) can chopped green chilies
  • 1 package taco seasoning
  • 1 (8 ounce) container sour cream
  • 1 can black beans, drained,rinsed and drained
  • 1 can whole kernel corn, drained
  • 1 cup crushed tortilla chips
  • 1 cup mexican blend cheese

  • 1 heat the oil in a skillet and cook the onion until it is translucent.
  • 2 stir in the chicken and the flour.
  • 3 cook, stirring until the flour cannot be seen.
  • 4 stir in chilies, taco seasoning, sour cream, beans and corn, and continue to stir until the mixture boils.
  • 5 place mixture into a 9x13-inch pan that has been sprayed with cooking oil spray.

Caramel Apple Fruit Dip

  • 1 (11 1/2 ounce) container whipped cream cheese
  • 1 (16 1/2 ounce) container caramels (marzetti caramel dip, found in the produce aisle)
  • 1/3 cup granola cereal
  • 3 -4 granny smith apples

  • 1 thoroughly mix the cream cheese and caramel dip in a serving bowl (i use a pie plate).
  • 2 refrigerate until ready to use (can stay there over night).
  • 3 slice and core the apples.
  • 4 sprinkle the granola on top of the dip and serve with apple slices.

  • 1 tablespoon almond milk
  • reserved 3/8 c batter
  • 1/2 cup dark brown sugar

  • 1 1. preheat oven to 350 degrees. generously grease the sides and bottom of a spring form pan. line bottom with wax paper.
  • 2 2. prepare crust by melting margarine. mix in butter flavoring and set aside.
  • 3 3. place graham crackers in a food processor and grind very fine. add sugar and process for about 1 minute.
  • 4 4. in a medium bowl combine graham cracker and butter mixtures until well incorporated. press mixture to the bottom of the spring form pan and set aside.

  • 1 teaspoon lemon rind
  • 1 cup sour cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla

Recipe

  • 1 spoon mincemeat into baked pie shell.
  • 2 combine cream cheese, eggs, 1/2 cup sugar, lemon juice and rind, beat until smooth.
  • 3 pour cream cheese mixture over mincemeat.
  • 4 bake at 375 degrees for 20 minutes.
  • 5 blend sour cream with 2 tablespoons sugar and vanilla. spoon over filling.
  • 6 return to oven; continue to bake for 10 more minutes.
  • 7 refrigerate at least 5 hours before serving.
