Better Vegan Nacho Cheese Sauce

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1/2 cup cashews, soaked overnight in water then drained
  • 1 cup unsweetened soymilk
  • 1 garlic clove, peeled
  • 1/2 small onion, chopped
  • 1/2 small red bell pepper, chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon miso
  • 1/4 teaspoon smoked paprika
  • 2 tablespoons nutritional yeast

Recipe

  • 1 place all ingredients in blender jar and process until very smooth.
  • 2 pour into a small saucepan and bring to a simmer. stir constantly until thickened.
