Better Vegan Nacho Cheese Sauce

Ingredients

- 1/2 cup cashews, soaked overnight in water then drained
- 1 cup unsweetened soymilk
- 1 garlic clove, peeled
- 1/2 small onion, chopped
- 1/2 small red bell pepper, chopped
- 1 tablespoon fresh lemon juice
- 1 tablespoon miso
- 1/4 teaspoon smoked paprika
- 2 tablespoons nutritional yeast
Recipe
- 1 place all ingredients in blender jar and process until very smooth.
- 2 pour into a small saucepan and bring to a simmer. stir constantly until thickened.
