Cheesy Stuffed Poblano Peppers

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 1 1/2 cups black beans (i use canned and rinsed)
  • 1 teaspoon chipotle paste (smash together canned chipotles in adobo sauce)
  • 1 cup heavy cream
  • 2 mangoes
  • 1 red onion
  • 1 tomato
  • 1 bunch cilantro
  • 1 lemon juice
  • 5 tablespoons olive oil
  • 1 teaspoon salt and pepper
  • 4 poblanos chilies
  • 1 cup goat cheese (can sub additioinal jack and cheddar)
  • 1 cup monterey jack cheese
  • 1 cup cheddar cheese

Recipe

  • 1 for the black bean sauce: saute onion with garlic, add black beans, chipotle and heavy cream; blend until smooth.
  • 2 for the mango pico de gallo: cut mangoes and all ingredients into small cubes, dress with lemon juice, olive oil, salt and pepper.
  • 3 roast and peel the poblanos. shred cheeses and stuff chiles; warm up in the oven until cheeses start to melt.
  • 4 serve with black bean sauce and mango pico de gallo.
