Almost Green Chicken Enchiladas

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 10 whole wheat tortillas
  • 14 1/2 ounces s&w diced tomatoes with green pepper and onion
  • 2 1/4 ounces black olives, sliced
  • 2 cups monterey jack cheese, grated
  • 4 chicken thighs, baked and diced
  • olive oil
  • green taco sauce (i used lavictoria)

Recipe

  • 1 bake chicken and allow to cool prior to assembling.
  • 2 heat oven to 375, bake.
  • 3 oil the bottom of a 9x13 pan.
  • 4 mix olives and tomatoes in a bowl, set aside.
  • 5 grate cheese in another bowl, set aside.
  • 6 open jar of taco sauce.
  • 7 fill center line of tortilla with 2 spoons of chicken, 2 spoons of tomato-olive mix, a little cheese and two spoons of green sauce.
  • 8 fold ingredients around tortilla and place down in the pan.
  • 9 fill all tortillas.
  • 10 cover the top with remaining cheese and green sauce.
  • 11 bake for 20-30 min until all enchiladas are heated through.
  • 12 extra cheese or sauce may be desired when serving.
