Classic Cheesecake

Ingredients

- 2 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 24 ounces cream cheese (softed)
- 1 1/2 cups sugar
- 3 tablespoons lemon juice
- 1 1/2 teaspoons vanilla
- 1/8 teaspoon salt
- 6 eggs
- 10 ounces sour cream
- 4 tablespoons sugar
- 1 1/2 teaspoons vanilla
Recipe
- 1 combine crumbs and butter, press into buttered spring form pan, bottom and sides.
- 2 beat cream cheese until fluffy. gradually blend in sugar, lemon juice, vanilla, and salt.
- 3 add eggs one at a time, beating well after each.
- 4 pour filling into crumb crust.
- 5 bake at 325 until set (for about an hour).
- 6 while cheesecake is baking, combine sour cream, sugar, and vanilla, spoon over top of cooked cheesecake.
- 7 bake 10 mins longer.
- 8 cool in oven.
- 9 chill for several hours before serving.
- 10 top with cherries, strawberries, or leave it plain.
