Cheesy Stuffed Zucchini

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 4 zucchini
  • 1 ounce butter
  • 4 scallions, chopped
  • 1 garlic clove, crushed
  • 4 1/2 ounces cheddar cheese
  • 1 egg yolk
  • 1 tablespoon oregano, freshly chopped
  • fresh ground black pepper

Recipe

  • 1 preheat the oven to 350°f.
  • 2 place the zucchini in boiling water and cook for 4-5 minutes.
  • 3 remove them from the water and cut in half lengthways. scoop out the middle, chop and set aside.
  • 4 melt the butter in a saucepan, add the onions and garlic and cook for 3-4 minutes, until softened.
  • 5 stir in the reserved chopped zucchini, three-quarters of the cheese, the egg yolk, oregano & seasoning to taste. divide into 8 and use to fill the zucchini shells.
  • 6 arrange in a lightly oiled ovenproof dish, sprinkle with the remaining cheese and place in the oven for 40 minutes, until tender and golden.
