Cheesy Stuffed Zucchini

Ingredients

- 4 zucchini
- 1 ounce butter
- 4 scallions, chopped
- 1 garlic clove, crushed
- 4 1/2 ounces cheddar cheese
- 1 egg yolk
- 1 tablespoon oregano, freshly chopped
- fresh ground black pepper
Recipe
- 1 preheat the oven to 350°f.
- 2 place the zucchini in boiling water and cook for 4-5 minutes.
- 3 remove them from the water and cut in half lengthways. scoop out the middle, chop and set aside.
- 4 melt the butter in a saucepan, add the onions and garlic and cook for 3-4 minutes, until softened.
- 5 stir in the reserved chopped zucchini, three-quarters of the cheese, the egg yolk, oregano & seasoning to taste. divide into 8 and use to fill the zucchini shells.
- 6 arrange in a lightly oiled ovenproof dish, sprinkle with the remaining cheese and place in the oven for 40 minutes, until tender and golden.
