Cream Cheese Frosting - Lower Fat But You'd Never Know!

Ingredients

  • 2/3 cup light cream cheese (about 5 oz)
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar

Recipe

  • 1 place room temperature or softened cream cheese and vanilla in a large bowl.
  • 2 beat with a mixer at medium speed until fluffy.
  • 3 add powdered sugar, beat at low speed until smooth.
  • 4 this makes enough for a 9x13" cake -- for an 8" or 9" cake, doubling the recipe works well.
