Curried Scrambled Eggs

- 6 eggs
- 1/3 cup half-and-half
- 1 (3 ounce) package cream cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon butter
- 1/2-1 teaspoon curry powder
- 8 slices toast
- 2 teaspoons parsley, for garnish
Recipe
- 1 in a bowl beat together eggs and half-and-half.
- 2 crumble the cream cheese. add to egg mixture. season with salt and pepper.
- 3 melt the butter in a skillet. add curry powder and make sure it blends well with the butter.
- 4 pour egg-cream cheese mixture into hot skillet.
- 5 reduce heat. cook slowly, gently stirring and lifting the mixture from sides and bottome of skillet. cook unti set but still moist and creamy.
- 6 immediately spoon scrambled eggs onto hot toast. garnish with parsley. serve.
