Corn & Capsicum Casserole

Total Time: 23 mins Preparation Time: 5 mins Cook Time: 18 mins

Ingredients

  • Servings: 4
  • 30 g butter
  • 4 shallots, chopped
  • 1 green capsicum, chopped
  • 1 red capsicum, chopped
  • 440 g canned corn kernels, drained
  • 1 tablespoon cream
  • salt & pepper
  • 1/2 cup grated cheese
  • 1 tablespoon chopped parsley

Recipe

  • 1 melt butter & saute, shallots, capsicums & corn, cook for 2 minutes.
  • 2 remove from heat, add cream & salt & pepper.
  • 3 pour mixture into an ovenproof dish, sprinkle with cheese & parsley.
  • 4 bake at 180.c for approx 15 minutes.
