Debs Potato Salad

Ingredients
- Servings: 4
- 5 medium red potatoes, unpeeled & cubed
- 1/4 vidalia onion, finely chopped
- 4 sweet gherkins, chopped
- 2 hard-boiled eggs, chopped
- 2 tablespoons crumbled feta cheese
- 4 sun-dried tomatoes, chopped
- 1 cup mayonnaise
- 1/4 cup sour cream
- salt and pepper
Recipe
- 1 boil the potatoes for 10 mins or until tender ( do not overcook )drain and cool.
- 2 mix the mayonnaise and sour cream in a large bowl.
- 3 add all the other ingredients and stir gently to mix.
- 4 season with salt and pepper.
- 5 refrigerate for an hour before serving.
