Chocolate Raspberry Cheese Pie

Ingredients
- 2 (3 ounce) packages cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
- 1 egg
- 3 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 cup raspberries
- 1 (6 ounce) chocolate wafer pie crust
- 2 (1 ounce) semi-sweet chocolate baking squares
- 1/4 cup whipping cream
Recipe
- 1 heat oven to 350 degrees.
- 2 with mixer, beat cream cheese until fluffy.
- 3 gradually beat in sweetened condensed milk until smooth.
- 4 add egg, lemon juice, and vanilla extract and mix well.
- 5 arrange raspberries on bottom of crust.
- 6 slowly pour cheese mixture over fruit.
- 7 bake 30 to 35 minutes or until center is almost set.
- 8 cool.
- 9 chocolate glaze: in small saucepan, over low heat, melt 2 (1 ounce) squares semisweet chocolate with 1/4 cup whipping cream. cook until thickened and smooth. remove from heat. top cheesecake with chocolate glaze; chill. garnish as desired. makes 1 pie.
