Deli Pasta Salad

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 8 ounces small shell pasta
  • 1/4 lb hard salami, cut into strips
  • 1/4 lb smoked provolone cheese, cut into strips
  • 1 small red onion, sliced and separated into rings
  • 1 cup chopped green pepper
  • 1 cup black olives, sliced (i usually cheat and use a 4 oz can of sliced olives)
  • 1/4 cup chopped parsley
  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon salt
  • fresh ground black pepper
  • 1/4 cup grated parmesan cheese

Recipe

  • 1 mix ingredients for dressing in a bowl and set aside.
  • 2 cook and drain pasta.
  • 3 toss with 1/4 cup dressing.
  • 4 add remaining ingredients to dressing in bowl and mix.
  • 5 combine with pasta and chill before serving.
