Creamy Chicken Enchiladas

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 boneless chicken breasts, cooked and shredded
  • 6 ounces chopped olives
  • 6 ounces chopped green chilies
  • 1 small onion, diced
  • 8 ounces cream cheese, at room temperature
  • 1/2 cup grated monterey jack cheese
  • 3/4 cup monterey jack cheese, for top of enchiladas
  • 8 -10 flour tortillas
  • 1 pint whipping cream

Recipe

  • 1 mix together all ingredients except 3/4 cup of jack cheese.
  • 2 spoon 3-4 tablespoons into each tortilla and roll them tight with the end facing the bottom of a greased 13x9 glass dish.
  • 3 pour whipping cream over all enchiladas.
  • 4 sprinkle remaining jack cheese over the top fo enchiladas.
  • 5 cover and bake at 350 degrees for 20-30 minutes. uncover and broil to bubbly and golden.
