- 3 cups water
- 3/4 cup quick-cooking grits
- 1/4 teaspoon salt
- 1 cup shredded extra-sharp cheddar cheese
- 1 chipotle chile in adobo, mashed

- 1 bring water to a boil in a medium pan; stir in grits and salt. cover and cook on reduced heat, simmer for 5 minutes, stirring twice. remove from heat; stir in cheese and grits.
