Creamy Chicken Enchiladas

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • 1 tablespoon butter
  • 1 (4 1/2 ounce) can green chilies (chopped)
  • 3 1/2 cups cooked chicken, chopped & seasoned to your liking (use pre-cooked rotisserie chicken from your grocer to save time)
  • 2 (8 ounce) packages monterey jack cheese
  • 1 medium onion, chopped
  • 1 (8 ounce) package cream cheese, softened
  • 8 (8 inch) flour tortillas
  • 2 cups whipping cream

Recipe

  • 1 saute the onion in butter for 5 minutes.
  • 2 add green chilies (drained) and saute 1 minute more.
  • 3 stir in the cream cheese (cubed) and chicken.
  • 4 cook, stirring constantly, until cheese melts.
  • 5 spoon 2 to 3 tablespoons down the center of each tortilla.
  • 6 roll tortillas and place seam side down in a sprayed 13x9 baking dish.
  • 7 top with schredded monterey jack cheese.
  • 8 drizzle evenly with whipping cream.
  • 9 bake at 350 for 45 minutes.
