Creamy Chicken Enchiladas

Ingredients
- 1 tablespoon butter
- 1 (4 1/2 ounce) can green chilies (chopped)
- 3 1/2 cups cooked chicken, chopped & seasoned to your liking (use pre-cooked rotisserie chicken from your grocer to save time)
- 2 (8 ounce) packages monterey jack cheese
- 1 medium onion, chopped
- 1 (8 ounce) package cream cheese, softened
- 8 (8 inch) flour tortillas
- 2 cups whipping cream
Recipe
- 1 saute the onion in butter for 5 minutes.
- 2 add green chilies (drained) and saute 1 minute more.
- 3 stir in the cream cheese (cubed) and chicken.
- 4 cook, stirring constantly, until cheese melts.
- 5 spoon 2 to 3 tablespoons down the center of each tortilla.
- 6 roll tortillas and place seam side down in a sprayed 13x9 baking dish.
- 7 top with schredded monterey jack cheese.
- 8 drizzle evenly with whipping cream.
- 9 bake at 350 for 45 minutes.
