Classic Pesto

Ingredients
- 1 pinch coarse sea salt
- 60 small fresh basil leaves or 30 large fresh basil leaves, rinsed and dried
- 3 garlic cloves, peeled
- 3 tablespoons pine nuts, lightly toasted
- 2 tablespoons pecorino romano cheese, fresh, finely grated
- 2 tablespoons parmigiano-reggiano cheese, fresh, finely grated
- 3 -4 tablespoons virgin olive oil
- 1 lb gnocchi
Recipe
- 1 cook gnocchi as directed on package.
- 2 in a blender add basil, salt and garlic.
- 3 blend into a paste, add pine nuts and slowly pour half of the olive oil.
- 4 add cheese and the remaining olive oil.
- 5 blend until it becomes a creamy paste.
- 6 pour over gnocchi and serve.
