Classic Pesto

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 1 pinch coarse sea salt
  • 60 small fresh basil leaves or 30 large fresh basil leaves, rinsed and dried
  • 3 garlic cloves, peeled
  • 3 tablespoons pine nuts, lightly toasted
  • 2 tablespoons pecorino romano cheese, fresh, finely grated
  • 2 tablespoons parmigiano-reggiano cheese, fresh, finely grated
  • 3 -4 tablespoons virgin olive oil
  • 1 lb gnocchi

Recipe

  • 1 cook gnocchi as directed on package.
  • 2 in a blender add basil, salt and garlic.
  • 3 blend into a paste, add pine nuts and slowly pour half of the olive oil.
  • 4 add cheese and the remaining olive oil.
  • 5 blend until it becomes a creamy paste.
  • 6 pour over gnocchi and serve.
