Brunch Sausage Enchilada Casserole

Ingredients
- Servings: 8
- 1 lb sausage, browned and cooled
- 1/4 cup green onion, chopped
- 1/4 cup celery or 1/4 cup green pepper, chopped
- 2 cups grated cheese
- 8 (8 inch) flour tortillas
- 4 eggs
- 2 cups milk
- 1 tablespoon flour
- 1/2 teaspoon garlic powder
- 2 cups grated cheese
- chopped green onion, to garnish
- tomato, to garnish
Recipe
- 1 mix sausage, green onion celery or green pepper.
- 2 mix eggs milk flour and garlic powder.
- 3 place 1/2 cup meat mixture in middle of tortilla.
- 4 roll and place in 9 x 13 inch pan seam side down.
- 5 pour egg mixture over rolls.
- 6 cover and refrigerate overnight.
- 7 bake coverd 45 to 50 minutes or until set.
- 8 sprinkle with cheese bake 5 more minutes.
- 9 let stand 10 minutes before serving.
- 10 garnish with green onion and chopped tomatoes.
- 11 serve with enchilada sauce if desired.
