Brunch Sausage Enchilada Casserole

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 1 lb sausage, browned and cooled
  • 1/4 cup green onion, chopped
  • 1/4 cup celery or 1/4 cup green pepper, chopped
  • 2 cups grated cheese
  • 8 (8 inch) flour tortillas
  • 4 eggs
  • 2 cups milk
  • 1 tablespoon flour
  • 1/2 teaspoon garlic powder
  • 2 cups grated cheese
  • chopped green onion, to garnish
  • tomato, to garnish

Recipe

  • 1 mix sausage, green onion celery or green pepper.
  • 2 mix eggs milk flour and garlic powder.
  • 3 place 1/2 cup meat mixture in middle of tortilla.
  • 4 roll and place in 9 x 13 inch pan seam side down.
  • 5 pour egg mixture over rolls.
  • 6 cover and refrigerate overnight.
  • 7 bake coverd 45 to 50 minutes or until set.
  • 8 sprinkle with cheese bake 5 more minutes.
  • 9 let stand 10 minutes before serving.
  • 10 garnish with green onion and chopped tomatoes.
  • 11 serve with enchilada sauce if desired.
