Cobb Salad

Ingredients
- Servings: 4
- 2 eggs, boiled
- 4 slices bacon, cooked
- 10 ounces fresh spinach
- 1 small head leaf lettuce
- 1/4 cup crumbled blue cheese
- 1 1/2 cups cooked chicken, shredded
- 1 avocado, sliced
- 1 tablespoon lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup olive oil
Recipe
- 1 line 4 plates with spinach. tear lettuce into bite sized pieces and top spinach.
- 2 arrange blue cheese, chicken, avocado, and bacon on top of greens. peel and quarter eggs. place 2 wedges on each plate.
- 3 in a small bowl, combine lemon juice, salt and pepper. whisk in oil. pour dressing over salad and serve.
