Cobb Salad

Ingredients

  • Servings: 4
  • 2 eggs, boiled
  • 4 slices bacon, cooked
  • 10 ounces fresh spinach
  • 1 small head leaf lettuce
  • 1/4 cup crumbled blue cheese
  • 1 1/2 cups cooked chicken, shredded
  • 1 avocado, sliced
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup olive oil

Recipe

  • 1 line 4 plates with spinach. tear lettuce into bite sized pieces and top spinach.
  • 2 arrange blue cheese, chicken, avocado, and bacon on top of greens. peel and quarter eggs. place 2 wedges on each plate.
  • 3 in a small bowl, combine lemon juice, salt and pepper. whisk in oil. pour dressing over salad and serve.
