Chocolate Strawberry Cream Cheese Torte

Ingredients

  • Servings: 12
  • 2 1/4 cups ground chocolate graham crackers
  • 6 tablespoons light margarine, melted
  • 2 (8 ounce) packages light cream cheese, softened
  • 3/4 cup sugar
  • 1/2 cup egg
  • 2 teaspoons vanilla
  • 2 teaspoons lemon extract
  • 8 cups frozen strawberries, thawed
  • 3/4 cup sugar
  • 3 tablespoons cornstarch

Recipe

  • 1 preheat oven to 350°f
  • 2 make crust: combine finely crushed grahams & margarine in a bowl. press into an 9x13" baking dish.
  • 3 beat cream cheese with electric mixer in large bowl. add sugar, egg whites, and extracts. beat on high speed 2-3 minutes.
  • 4 spread cream cheese mixture over crust. bake 25-30 minutes until set. cool.
  • 5 make topping: drain the thawed berries over a saucepan to collect juices.
  • 6 whisk in sugar and cornstarch until smooth. place in saucepan over medium heat, stirring often, until mixture bubbles and thickens. cool completely.
  • 7 chill torte and topping.
  • 8 to serve, cut torte into pieces and ladle each serving with strawberry topping.
