Chocolate Strawberry Cream Cheese Torte

Ingredients

- 2 1/4 cups ground chocolate graham crackers
- 6 tablespoons light margarine, melted
- 2 (8 ounce) packages light cream cheese, softened
- 3/4 cup sugar
- 1/2 cup egg
- 2 teaspoons vanilla
- 2 teaspoons lemon extract
- 8 cups frozen strawberries, thawed
- 3/4 cup sugar
- 3 tablespoons cornstarch
Recipe
- 1 preheat oven to 350°f
- 2 make crust: combine finely crushed grahams & margarine in a bowl. press into an 9x13" baking dish.
- 3 beat cream cheese with electric mixer in large bowl. add sugar, egg whites, and extracts. beat on high speed 2-3 minutes.
- 4 spread cream cheese mixture over crust. bake 25-30 minutes until set. cool.
- 5 make topping: drain the thawed berries over a saucepan to collect juices.
- 6 whisk in sugar and cornstarch until smooth. place in saucepan over medium heat, stirring often, until mixture bubbles and thickens. cool completely.
- 7 chill torte and topping.
- 8 to serve, cut torte into pieces and ladle each serving with strawberry topping.
