Broccoli With Red Onions, Blue Cheese And Mint

- 2 large broccoli
- 2 large red onions
- 1/4 cup olive oil
- 6 ounces blue cheese, crumbles
- 2/3 cup mint leaf, coarsely chopped

Recipe
- 1 cut broccoli into large pieces.
- 2 steam broccoli until tender but still bright green, about 10-12 minutes.
- 3 peel onions and cut in half through root end. cut onion into thin slices.
- 4 heat oil in large skillet. add onions and cook until soft, and some are dark brown and crispy, about 10 minutes.
- 5 put broccoli in a large bowl, add onions, cheese and mint.
- 6 toss, adding salt, pepper and more olive oil if necessary.
