Broccoli With Red Onions, Blue Cheese And Mint

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 large broccoli
  • 2 large red onions
  • 1/4 cup olive oil
  • 6 ounces blue cheese, crumbles
  • 2/3 cup mint leaf, coarsely chopped
  • coarse salt
  • pepper

Recipe

  • 1 cut broccoli into large pieces.
  • 2 steam broccoli until tender but still bright green, about 10-12 minutes.
  • 3 peel onions and cut in half through root end. cut onion into thin slices.
  • 4 heat oil in large skillet. add onions and cook until soft, and some are dark brown and crispy, about 10 minutes.
  • 5 put broccoli in a large bowl, add onions, cheese and mint.
