Deconstructed Tamales

Ingredients

- 1/2 cup sofrito sauce
- 17 ounces fully cooked lamb roast au jus sauce
- 14 1/2 ounces canned tomatoes with garlic or 14 1/2 ounces onions, undrained
- 1 (11 1/4 ounce) box , frozen arepas
- cooking spray
- 1/2 cup mexican blend cheese, shredded
- 1/2 lime
Recipe
- 1 if using frozen sofrito thaw under cool running water, if needed.
- 2 remove lamb roast from package.
- 3 drain(reserve au jus for another use if desired) place lamb roast in a large saucepan.
- 4 stir in sofrito and tomatoes.
- 5 bring to a boil over medium heat.
- 6 stir to break up meat.
- 7 cook and stir for 7-8 minutes or until throughly heated.
- 8 meanwhile, preheat medium fry pan over medium heat, about 2-3 minutes.
- 9 remove pan from heat and spray with cooking spray.
- 10 add arepas and cook for 2-3 minutes on each side or until throughly heated.
- 11 transfer arepas to serving platter.
- 12 top with lamb mixture and sprinkle with cheese.
- 13 squeeze a little lime juice over the tamale mixture to add a touch of fresh flavor, if desired.
- 14 serve.
- 15 enjoy.
