Caledonian Cream

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • Servings: 4
  • 4 ounces cream cheese, softened
  • 4 fluid ounces double cream
  • 1 tablespoon orange marmalade (the kind with orange peel in it)
  • 2 tablespoons brandy (or rum)
  • 2 teaspoons lemon juice
  • 1 tablespoon sugar (to taste)
  • 4 oranges, peeled, pith removed and segmented
  • 4 teaspoons brandy (or rum)

Recipe

  • 1 place first 6 ingredients in a blender and blend until smooth. add more sugar if needed.
  • 2 place the orange segments in four long-stemmed glasses and add a teaspoon of brandy (or rum) to each glass.
  • 3 divide the cream on top of each.
  • 4 chill until ready to serve. serve chilled.
