Caledonian Cream

Ingredients
- Servings: 4
- 4 ounces cream cheese, softened
- 4 fluid ounces double cream
- 1 tablespoon orange marmalade (the kind with orange peel in it)
- 2 tablespoons brandy (or rum)
- 2 teaspoons lemon juice
- 1 tablespoon sugar (to taste)
- 4 oranges, peeled, pith removed and segmented
- 4 teaspoons brandy (or rum)
Recipe
- 1 place first 6 ingredients in a blender and blend until smooth. add more sugar if needed.
- 2 place the orange segments in four long-stemmed glasses and add a teaspoon of brandy (or rum) to each glass.
- 3 divide the cream on top of each.
- 4 chill until ready to serve. serve chilled.
