Black Beans And Rice

Ingredients
- 1 lb dried black beans, soaked overnight
- 2 (10 ounce) cans tomato sauce
- 3 tablespoons tomato paste
- 1 tablespoon abodo seasoning
- 1 large onion, diced
- 1 red bell pepper, diced
- 2 (4 ounce) cans green chilies
- 1 tablespoon soybean oil
- 1 cup copped fresh cilantro
- 1 lime, juice of
- 1 lime, zest of
- 2 cups hot cooked rice
- 1/4 cup pico de gallo
- 2 cups shredded cheddar cheese
- 1 (16 ounce) carton sour cream
Recipe
- 1 in a skillet heat oil, brown onions and peppers til soft. add tomato paste and simmer 2 minutes.
- 2 add everything but rice, cheese, pico de gallo and sour cream to slow cooker.
- 3 cook on low for 8 hours.
- 4 stir in rice.
- 5 top with pico de gallo, cheese and sour cream.
