Black Beans And Rice

Ingredients

  • 1 lb dried black beans, soaked overnight
  • 2 (10 ounce) cans tomato sauce
  • 3 tablespoons tomato paste
  • 1 tablespoon abodo seasoning
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 2 (4 ounce) cans green chilies
  • 1 tablespoon soybean oil
  • 1 cup copped fresh cilantro
  • 1 lime, juice of
  • 1 lime, zest of
  • 2 cups hot cooked rice
  • 1/4 cup pico de gallo
  • 2 cups shredded cheddar cheese
  • 1 (16 ounce) carton sour cream

Recipe

  • 1 in a skillet heat oil, brown onions and peppers til soft. add tomato paste and simmer 2 minutes.
  • 2 add everything but rice, cheese, pico de gallo and sour cream to slow cooker.
  • 3 cook on low for 8 hours.
  • 4 stir in rice.
  • 5 top with pico de gallo, cheese and sour cream.
