Asparagus Casserole

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups ritz crackers (about 39)
  • 1/2 cup melted margarine
  • 1 (1 lb) can asparagus, pieces
  • 6 hardboiled egg, sliced
  • 4 tablespoons margarine
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 (5 ounce) jar kraft old english cheese
  • salt and pepper

Recipe

  • 1 crush crackers in a plastic bag.
  • 2 add the melted margarine and shake to mix.
  • 3 drain asparagus.
  • 4 put half of the crumbs in a 9 inch square pan.
  • 5 layer egg slices over crumbs and top with asparagus.
  • 6 in a saucepan, melt the 4 tbs.
  • 7 of margarine; stir in flour and milk, slowly to avoid lumps.
  • 8 add cheese, salt and pepper.
  • 9 stir, cooking over low heat until it thickens.
  • 10 pour over asparagus and top with remaining cracker crumbs.
  • 11 bake at 450 degrees 12-14 minutes.
