Black Beans With Feta Cheese

Ingredients

- 2 (16 ounce) cans black beans, drained and rinsed
- 1/2 cup diced red onion
- 2 tablespoons finely chopped fresh mint
- 2 tablespoons finely chopped fresh parsley
- 1/4 cup fresh lemon juice
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 2 ounces feta cheese, crumbled
Recipe
- 1 in large bowl, combine beans, red onion, mint and parsley.
- 2 in a small bowl, whisk together lemon juice, olive oil, garlic and 1 tablespoon water. pour over beans and mix to combine.
- 3 fold in feta.
