Black Beans With Feta Cheese

Ingredients

  • Servings: 6
  • 2 (16 ounce) cans black beans, drained and rinsed
  • 1/2 cup diced red onion
  • 2 tablespoons finely chopped fresh mint
  • 2 tablespoons finely chopped fresh parsley
  • 1/4 cup fresh lemon juice
  • 2 teaspoons olive oil
  • 1 garlic clove, minced
  • 2 ounces feta cheese, crumbled

Recipe

  • 1 in large bowl, combine beans, red onion, mint and parsley.
  • 2 in a small bowl, whisk together lemon juice, olive oil, garlic and 1 tablespoon water. pour over beans and mix to combine.
  • 3 fold in feta.
