Chilies Rellenos Bake For 2

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 2
  • 1/2 lb ground beef
  • 1/4 cup chopped onion
  • 1 (4 ounce) can green chilies
  • 2 ounces sharp american cheese, shredded (1/2 cup)
  • 3/4 cup cold milk
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 dash pepper
  • 2 beaten eggs
  • 1 dash hot sauce

Recipe

  • 1 in skillet, brown beef and onion; drain off excess fat.
  • 2 sprinkle meat with 1/4 teaspoon salt and dash pepper.
  • 3 split chilies lengthwise and remove seeds; spread open.
  • 4 lay half of chilies on bottom of a shallow 1-quart baking dish.
  • 5 sprinkle with cheese; top with meat mixture.
  • 6 arrange remaining chilies over meat.
  • 7 gradually add milk to flour, stirring till smooth.
  • 8 add salt, pepper, eggs, and hot sauce; beat till smooth.
  • 9 pour over casserole.
  • 10 bake in moderate overn (350 degrees) 45 to 50 minutes or till knife inserted just off center comes out clean.
  • 11 pour off excess fat.
  • 12 cool 5 minutes.
