Cherry Tomatoes With Gorgonzola And Basil

Ingredients

- 1 lb cherry tomatoes or 1 lb grape tomatoes
- 3 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 2 garlic cloves, chopped
- 1/2 cup gorgonzola, crumbled
- salt and pepper
Recipe
- 1 preheat oven to 400°.
- 2 place tomatoes on a baking sheet (line with foil for easy clean up) and drizzle with olive oil, herbs and garlic.
- 3 stir to combine.
- 4 roast for 4-5 minute in the oven, just until the tomatoes are hot and shiny. do not over roast or the skins will split.
- 5 remove from the oven and sprinkle gorgonzola over the top.
- 6 roast for 2-3 more minutes or just until the cheese has softened.
- 7 remove from the oven and season with salt and pepper.
- 8 serve warm or at room temperature.
