Cherry Tomatoes With Gorgonzola And Basil

Ingredients

  • Servings: 4
  • 1 lb cherry tomatoes or 1 lb grape tomatoes
  • 3 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 2 garlic cloves, chopped
  • 1/2 cup gorgonzola, crumbled
  • salt and pepper

Recipe

  • 1 preheat oven to 400°.
  • 2 place tomatoes on a baking sheet (line with foil for easy clean up) and drizzle with olive oil, herbs and garlic.
  • 3 stir to combine.
  • 4 roast for 4-5 minute in the oven, just until the tomatoes are hot and shiny. do not over roast or the skins will split.
  • 5 remove from the oven and sprinkle gorgonzola over the top.
  • 6 roast for 2-3 more minutes or just until the cheese has softened.
  • 7 remove from the oven and season with salt and pepper.
  • 8 serve warm or at room temperature.
