Cherry Tomatoes Stuffed With Avocado, Quinoa And Bacon

Ingredients

  • 2 pints cherry tomatoes
  • 1 hass avocado
  • 1 tablespoon lemon juice
  • 3 sliced bacon, cooked crisp and chopped
  • 3/4 cup cooked quinoa
  • 1/3 cup finely chopped green onion
  • 2 tablespoons crumbled blue cheese
  • salt and pepper

Recipe

  • 1 slice the tops off the cherry tomatoes and scoop out pulp. place cut side down on paper towels and let drain 15 minutes.
  • 2 meanwhile, mash avocado and lemon juice. stir in quinoa, green onions and cheese. season to taste with salt and pepper.
  • 3 spoon quinoa mixture into tomato shells. refrigerate 1 hour before serving.
