Cherry Tomatoes Stuffed With Avocado, Quinoa And Bacon

Ingredients
- 2 pints cherry tomatoes
- 1 hass avocado
- 1 tablespoon lemon juice
- 3 sliced bacon, cooked crisp and chopped
- 3/4 cup cooked quinoa
- 1/3 cup finely chopped green onion
- 2 tablespoons crumbled blue cheese
- salt and pepper
Recipe
- 1 slice the tops off the cherry tomatoes and scoop out pulp. place cut side down on paper towels and let drain 15 minutes.
- 2 meanwhile, mash avocado and lemon juice. stir in quinoa, green onions and cheese. season to taste with salt and pepper.
- 3 spoon quinoa mixture into tomato shells. refrigerate 1 hour before serving.
