Cottage Cheese Pancakes

Ingredients
- 3 large eggs
- 1 cup cottage cheese
- 1/8 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
Recipe
- 1 separate eggs. lightly beat the yolks. in a separate bowl, beat the egg whites until stiff, glossy peaks form.
- 2 stir together all ingredients except the egg whites. whisk in one third of the egg whites. with a spatula, gently fold in the remaining egg whites.
- 3 grease a griddle or skillet with cooking spray or butter. heat over medium-high heat until a drop of batter sizzles upon contract. pour about 1/4 c per pancake onto the griddle/skillet. cook until the surface bubbles and the edges are slightly dry (about 1 minute). flip and cook until the underside is golden brown (about 3 more minutes).
