Chicken With Spinach And Feta

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb fresh spinach
  • 1/2 cup feta cheese
  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/3 cup heavy cream
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup chicken stock
  • 1 cup dry wine

Recipe

  • 1 cook washed spinach in pan until just wilted.
  • 2 combine spinach and feta cheese in a bowl.
  • 3 cut pocket in side of chicken breasts and stuff with spinach mixture, secure with toothpicks.
  • 4 heat oil in large saute pan, cook chicken on all sides until brown.
  • 5 to make sauce: in medium saucepan melt butter add flour.
  • 6 stir over medium heat until lightly browned.
  • 7 remove from heat and stir in stock and wine return to heat and stir until sauce boils.
  • 8 add sauce to chicken in saute pan cover and cook 25 minutes.
  • 9 stir in cream and parsley and stir until heated through.
