Chicken, Gorgonzola, & Pear Salad

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 1/2 cup extra virgin olive oil
  • 3 teaspoons red wine vinegar
  • 2 teaspoons honey dijon mustard
  • salt and pepper
  • 3 cups diced, cooked chicken breasts
  • 1/2 cup walnuts, toasted
  • 1/2 cup crumbled gorgonzola (ã¨}@ã¨}@ese can be substituted with similar results)
  • 2 pears, halved,cored,and sliced
  • 14 -16 ounces mixed salad greens

Recipe

  • 1 in a bowl, whisk together olive oil, vinegar, mustard, salt, and pepper to taste.
  • 2 add chicken, walnuts, and gorgonzola cheese and toss lightly.
  • 3 place greens on individual salad plates.
  • 4 arrange sliced pears in fan shape along one side on top of greens.
  • 5 with slotted spoon, divide the chicken mixture equally among plates.
  • 6 drizzle any dressing remaining in bowl over pears and greens.
