Black Beans (and Rice)

Ingredients
- 1 lb dried black beans, soaked overnight (turtle beans)
- 1 large green pepper, halved
- 6 cups water
- 1 large onion, chopped
- 4 garlic cloves (or more)
- 1 green pepper, chopped
- 4 teaspoons salt
- 1/2 teaspoon pepper
- 1/4 teaspoon oregano
- 1 teaspoon cumin
- 2 bay leaves
- 2 tablespoons sugar
- 2/3 cup olive oil
- 2 tablespoons vinegar
Recipe
- 1 soak the beans overnight.
- 2 cook (covered) beans, water, and halved green pepper for 1 hour in a large pot.
- 3 remove halved green pepper, and put in rest of ingredients.
- 4 simmer for 2 hours or until ready to serve.
- 5 serve with rice.
- 6 optional:.
- 7 top with green onions and shredded cheese.
- 8 or serve with nachos or flour tortilla with cheese.
