Black Beans (and Rice)

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • 1 lb dried black beans, soaked overnight (turtle beans)
  • 1 large green pepper, halved
  • 6 cups water
  • 1 large onion, chopped
  • 4 garlic cloves (or more)
  • 1 green pepper, chopped
  • 4 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon oregano
  • 1 teaspoon cumin
  • 2 bay leaves
  • 2 tablespoons sugar
  • 2/3 cup olive oil
  • 2 tablespoons vinegar

Recipe

  • 1 soak the beans overnight.
  • 2 cook (covered) beans, water, and halved green pepper for 1 hour in a large pot.
  • 3 remove halved green pepper, and put in rest of ingredients.
  • 4 simmer for 2 hours or until ready to serve.
  • 5 serve with rice.
  • 6 optional:.
  • 7 top with green onions and shredded cheese.
  • 8 or serve with nachos or flour tortilla with cheese.
