Corn Casserole

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1/4 lb butter (1 stick)
  • 1 large onion, chopped
  • 2 eggs, beaten
  • 1 (16 ounce) can whole kernel corn (with juice)
  • 1 (16 ounce) can cream-style corn
  • 1 (8 1/2 ounce) package jiffy corn muffin mix
  • 1 cup grated cheddar cheese (more or less to your liking)

Recipe

  • 1 saute onion in butter.
  • 2 mix eggs, both cans of corn and muffin mix in large bowl.
  • 3 pour into a greased 9x13" pan.
  • 4 spoon onions over mixture in pan.
  • 5 sprinkle with cheese and bake at 400* for 30 minutes.
