Cheese-topped Lamb Chops

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 4 thick lamb loin chops
  • pepper
  • 1 cup shredded cheese (your choice)
  • 2 tablespoons dijon mustard
  • 2 tomatoes, halved

Recipe

  • 1 trim fat from chops and cook fat in large skillet over high heat until rendered.
  • 2 remove and discard crisp bits.
  • 3 in rendered fat in pan, brown chops quickly.
  • 4 season with pepper to taste.
  • 5 reduce heat to medium low and cook for 20 minutes, or until cooked through, turning once.
  • 6 drain off any excess fat.
  • 7 combine cheese and mustard to form paste.
  • 8 spread evenly over each chop.
  • 9 place tomato halves around chops and broil until cheese melts and tomatoes are heated through - about 5 minutes.
