Cheese-topped Lamb Chops

Ingredients
- Servings: 4
- 4 thick lamb loin chops
- pepper
- 1 cup shredded cheese (your choice)
- 2 tablespoons dijon mustard
- 2 tomatoes, halved
Recipe
- 1 trim fat from chops and cook fat in large skillet over high heat until rendered.
- 2 remove and discard crisp bits.
- 3 in rendered fat in pan, brown chops quickly.
- 4 season with pepper to taste.
- 5 reduce heat to medium low and cook for 20 minutes, or until cooked through, turning once.
- 6 drain off any excess fat.
- 7 combine cheese and mustard to form paste.
- 8 spread evenly over each chop.
- 9 place tomato halves around chops and broil until cheese melts and tomatoes are heated through - about 5 minutes.
