Dad's To Die For Cheesecake

Ingredients
- 2 1/2 cups graham cracker crumbs
- 3 tablespoons sugar
- 3/4 cup melted butter
- 22 ounces cream cheese
- 1 cup sugar
- 3 large eggs
- 3 tablespoons fresh lemon juice
- 1 1/2 teaspoons vanilla
- 1/4 teaspoon salt
- 2 cups sour cream
Recipe
- 1 preheat oven to 350.
- 2 mix graham crackers, sugar and butter into large mixing bowl.
- 3 pack crust into spring form pan. bake for 10 minutes.
- 4 in a large mixing bowl, beat the cream cheese & sugar until very smooth (3 minutes).
- 5 add eggs, one at a time; beating after each addition until smooth. be sure to scrape the sides of the bowl.
- 6 add lemon juice, vanilla, and salt. beat until incorporated.
- 7 mix in sour cream until just blended. pour batter into crust.
- 8 place a 9x13 pan with an inch of very hot water on the bottom shelf of the oven. place cheesecake pan on the rack just above the water pan.
- 9 bake for 45 minutes. turn off oven without opening the door. let the cake cool for an hour.
- 10 remove cake from the oven and allow to cool on a rack until room temperature, about an hour.
- 11 cover with plastic wrap and refrigerate overnight.
