Dad's To Die For Cheesecake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 2 1/2 cups graham cracker crumbs
  • 3 tablespoons sugar
  • 3/4 cup melted butter
  • 22 ounces cream cheese
  • 1 cup sugar
  • 3 large eggs
  • 3 tablespoons fresh lemon juice
  • 1 1/2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 2 cups sour cream

Recipe

  • 1 preheat oven to 350.
  • 2 mix graham crackers, sugar and butter into large mixing bowl.
  • 3 pack crust into spring form pan. bake for 10 minutes.
  • 4 in a large mixing bowl, beat the cream cheese & sugar until very smooth (3 minutes).
  • 5 add eggs, one at a time; beating after each addition until smooth. be sure to scrape the sides of the bowl.
  • 6 add lemon juice, vanilla, and salt. beat until incorporated.
  • 7 mix in sour cream until just blended. pour batter into crust.
  • 8 place a 9x13 pan with an inch of very hot water on the bottom shelf of the oven. place cheesecake pan on the rack just above the water pan.
  • 9 bake for 45 minutes. turn off oven without opening the door. let the cake cool for an hour.
  • 10 remove cake from the oven and allow to cool on a rack until room temperature, about an hour.
  • 11 cover with plastic wrap and refrigerate overnight.
