Creamy Parmesan Vinaigrette

Total Time: 3 mins Preparation Time: 3 mins

Ingredients

  • 1 cup canola oil (or a mixture of both) or 1 cup olive oil (or a mixture of both)
  • 1 cup freshly grated parmesan cheese or 1 cup shredded sharp cheddar cheese
  • 2 tablespoons wine vinegar
  • 1/2 cup low-fat plain yogurt
  • 1 tablespoon dijon mustard
  • salt and pepper, to taste

Recipe

  • 1 combine all the ingredients in a blender until creamy and smooth.
  • 2 pour into a bowl, cover and store in the refrigerator. makes about 2 cups.
