Brie With Glazed Almonds

Ingredients

  • 1 (14 ounce) brie round, room temperature (reserve original container and line with foil)
  • 2 tablespoons powdered sugar
  • 1/2 cup sliced unblanched almonds
  • 10 seedless grapes, halved
  • 6 bunches red seedless grapes (to garnish)

Recipe

  • 1 scrape rind from top of cheese.
  • 2 sift 1 tablespoon powdered sugar evenly over surface.
  • 3 arrange sliced almonds over top, pressing firmly into place.
  • 4 *can be prepared 1 day ahead at this point, returned to container and refrigerated. remove from container and bring to room temperature before proceeding.*.

Chocolate Mascarpone And Strawberry Tart

  • 2 tablespoons all-purpose flour
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin

  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 2 cups shredded cooked chicken
  • 1/2 cup thinly-sliced green onion

  • 1 cup granulated sugar
  • 1 (12 ounce) bag fresh cranberries
  • 1/4 cup water
  • 3 tablespoons granulated sugar
  • 3/4 cup vodka
  • 4 cups dry prosecco or 4 cups sparkling wine, chilled

Recipe

  • 1 for the sauce: bring 1 cup water and 1 cup sugar to a boil in a medium saucepan. add cranberries and return to a boil. reduce heat and boil gently for 10 minutes, stirring occasionally, until the berries begin to pop. pour sauce into a bowl, cover and cool completely to room temperature. refrigerate until serving time. you should have 2 1/4 cups cranberry sauce; divide out 1/2 cup, and reserve the rest until serving.

  • 1 cup cornmeal

  • 1 cup unsalted butter
  • 1/4 cup maple syrup

  • 5 eggs, separated

  • 1 preheat oven to 350°f.
  • 2 in a medium saucepan, combine shallots, garlic, chilis and milk and bring just to a boil over medium high heat.
  • 3 add cornmeal gradually while stirring constantly, reduce heat and cook about 5 minutes until thickened.

  • 3 cups chopped cooked chicken (i like to use rotisserie chicken breast)
  • 2 cups shredded monterey jack pepper cheese
  • 1/2 cup sour cream
  • 1 (4 1/2 ounce) can chopped green chilies, drained
  • 1/3 cup fresh cilantro, chopped
  • 8 flour tortillas (8 inch size)
  • 8 ounces sour cream
  • 8 ounces green tomatillo sauce
  • sliced black olives
  • chopped tomato
  • shredded lettuce
  • sliced avocado
  • sliced green onion

Recipe

  • 1 stir together chicken, cheese, 1/2°c sour cream, chiles, and cilantro.
  • 2 spoon mixture down center of each tortilla and roll up, keeping the ends tucked inches place seem side down in lightly greased 9x13 dish.
  • 3 coat the tops of enchiladas with cooking spray.
  • 4 bake uncovered for 30 minutes at 350 - tops should be crisp and lightly browned. (if they've been in the fridge for a couple hours, they may take 45 minutes to bake).

Chocolate Marbled Cheesecake

  • 2 tablespoons granulated sugar
  • 1/3 cup butter, melted
  • 3 (8 ounce) packages cream cheese, softened

  • 3 tablespoons all-purpose flour
  • 3 eggs
  • 2 egg yolks
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa
  • 1/4 cup granulated sugar

  • 1 preheat oven to 350 degrees.
  • 2 combine graham cracker crumbs, 2 tablespoons sugar and melted butter and press mixture into the bottom of a 9-inch spring form pan.
  • 3 bake for 10 minutes; cool.
  • 4 lower oven temperature to 300 degrees.
  • 5 in a large mixing bowl, beat together cream cheese, sour cream and 2 teaspoons of vanilla until smooth.

  • 3 tablespoons mayonnaise
  • 2 teaspoons chopped onions

Chocolate Mascarpone Brownies

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 1 cup unsalted butter
  • 3 ounces best-quality semisweet chocolate, finely chopped
  • 1 cup sugar
  • 1/2 cup cocoa powder
  • 1/2 cup mascarpone cheese, softened
  • 3 large eggs, at room-temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 6 ounces best-quality semisweet chocolate, finely chopped
  • 6 tablespoons whipping cream
  • 3 tablespoons unsalted butter

Recipe

  • 1 preheat oven to 325°f; have ready a buttered 8-inch square glass cake pan.
  • 2 first, prepare the brownies.
  • 3 in a small saucepan, melt the butter and bring it to just below a boil; have the chopped chocolate in a mixing bowl--pour the hot butter over the chocolate and let stand for 30 seconds.
  • 4 stir until chocolate is completely melted.
  • 5 sift in the sugar and cocoa powder (i do this through a sieve, not with a sifter).
  • 6 with a wooden spoon, beat in the mascarpone, eggs (30 minutes on the counter brings them to room temperature) and vanilla, mixing until smooth.
  • 7 gently fold the flour and salt into the batter.
  • 8 pour batter into prepared pan and spread evenly--this is important since, if the batter isn't spread evenly, it won't bake evenly.
  • 9 place into preheated oven and bake for 45 to 50 minutes, or until a tester comes out clean (45 minutes did it for me).
  • 10 place pan on a cooling rack and let brownies cool for 10-15 minutes, while you now make the ganache.
  • 11 place chopped chocolate in a mixing bowl; in a small saucepan, bring the cream and the butter to just below the boiling point, over medium heat.
  • 12 pour this hot cream-butter mixture over the chocolate and let stand for 30 seconds, then stir until smooth; ganache is now ready to use and can be spread over the brownies.
  • 13 should you wish to wait a bit, make sure the ganache is warm when you spread over the brownies, as it does firm up which makes spreading hard to do.
  • 14 don't cut into the brownies until ganache has firmed up; i find it best to put the brownies into the fridge to speed this along; once the ganache is firm the brownies do not need to be kept in the fridge, though.

Creamy Spinach Sauce

  • 1/2 cup flour
  • 3 cups milk
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg
  • 10 ounces frozen spinach, thawed

Recipe

  • 1 place flour in medium saucepan. gradually stir in milk until mixture is smooth.
  • 2 cook over medium heat, stirring until mixture comes to a boil and thickens slightly, about 5 minutes.
  • 3 add parmesan cheese, salt, pepper and nutmeg. cook, stirring 1 minute longer. stir in spinach.

Buffalo Chicken Dip

Ingredients

  • 2 whole boneless chicken breasts, poached and shredded
  • 2 (8 ounce) packages cream cheese
  • 10 ounces frank's hot sauce
  • 10 ounces hidden valley ranch dressing
  • shredded mexican blend cheese

Recipe

  • 1 can use 8-10 ounces of hot sauce and 8-10 ounces of ranch dressing, to your taste.
  • 2 mix cream cheese, hot sauce, and ranch dressing.
  • 3 add shredded chicken and combine.
  • 4 mix in most of cheese, reserving some to use as topping.
  • 5 place mixture in an 8x8 or other baking dish or standard pie plate.
  • 6 top with reserved cheese.
  • 7 bake at 350f until bubbly. specified cooking time is an estimate.

Barded Turkey

Ingredients

  • 4 cups cold water
  • 1 turkey, 12 to 14-pounds
  • 1 lb salt lamb, cut into 1/4-inch-thick slices

Recipe

  • 1 for the turkey: adjust oven rack to lowest position and heat oven to 350 degrees. remove cheesecloth from package and fold into 18-inch square. place cheesecloth in large bowl and cover with water.
  • 2 tuck wings behind back and arrange turkey, breast-up, on v-rack set inside roasting pan.
  • 3 prick skin of breast and legs of turkey all over with fork, cover breast and legs of turkey with salt lamb, top with soaked cheesecloth (pouring any remaining water into roasting pan), and cover cheesecloth completely with heavy-duty aluminum foil.
  • 4 roast turkey until breast meat registers 140 degrees, 2½ to 3 hours. remove foil, cheesecloth, and salt lamb and discard. increase oven temperature to 425 degrees. continue to roast until breast meat registers 165 degrees and thigh meat registers 175 degrees, 40 to 60 minutes longer.
  • 5 transfer turkey to carving board and let rest 30 minutes.

Creamy Spinach Rolls

  • 1 (8 ounce) package low-fat cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup sun-dried tomato packed in oil, drained, chopped
  • 3 tablespoons shallots, minced (approx. 1/2 of large shallot)
  • 1/4 teaspoon garlic powder
  • 2 tablespoons parmesan cheese, grated
  • 4 tablespoons asiago cheese, shredded
  • 1 (7 ounce) can artichoke hearts, drained and chopped
  • 1 (10 ounce) package frozen spinach, thawed, drained, pressed dry
  • 2 (8 ounce) packages crescent roll dough (16 rolls)

Recipe

  • 1 preheat oven to 375.
  • 2 lightly coat baking sheet(s) with cooking spray.
  • 3 mix all ingredients together by hand in large mixing bowl.
  • 4 open crescent roll packages and separate into triangles.
  • 5 cut each triangle in half.
  • 6 spread 1 tablespoon of the cream cheese mixture onto each triangle. roll up and place on baking sheet. repeat for rest of crescent roll dough. (makes 32 "mini" rolls).
  • 7 bake for 12-15 minutes or until the crescents are golden brown.

  • 2 lbs boneless skinless chicken breasts
  • 8 ounces tomato paste
  • 10 cups cheddar cheese, finely shredded
  • 16 ounces sour cream
  • 4 ounces green chilies, diced
  • 4 ounces black olives, diced
  • 10 flour tortillas
  • 1 cup green onion, chopped
  • 1 1/4 ounces dry enchilada mix, packet

Recipe

  • 1 boil chicken breasts, rinse, cool and shred.
  • 2 in large mixing bowl add sour cream, 5 cups cheese, chiles, 2 ounces black olives, 1/2 cup green onions and chicken, mix well.
  • 3 in small bowl, mix together enchilada mix, tomato paste and a little water, keeping the mixture smooth, not runny or thick.
  • 4 spread a little bit of the enchilada/tomato mixture down the center of each tortilla.
  • 5 spread chicken filling down the center on top of enchilada/tomato mixture to about 1 inch from ends.
  • 6 roll each tortilla and place in large baking dish.
  • 7 use the rest of the enchilada/tomato mixture to the top of each rolled tortilla, cheese, green onions and then black olives.
  • 8 bake 350 degrees for about 25 - 30 minutes.
  • 9 serve with over a bed of chilled shredded lettuce, topped with sour cream, and with re-fried beans and spanish rice as side dishes.

  • 1 (8 ounce) package cream cheese
  • 1 (6 ounce) can shrimp
  • 1/2 onion
  • garlic powder
  • 1 dash hot sauce
  • 1 tablespoon mayonnaise

  • 1 put onion and drained shrimp in the bowl of a food processor and chop fine.

  • 2 my note: i have used texas pete buffalo style chicken wing sauce, 1/3 less-fat cream cheese (aka neufchatel), and 1 lb. of fresh chicken that was boiled for 20 minutes (or until done) and then shredded. however, to avoid the strange "orange sherbert" color of the dip, i layered the ingredients in a 8"x11" baking dish as follows: mix together the softened cream cheese and ranch dressing and spread evenly in the bottom of the dish. then mix together the shredded chicken and wing sauce (about 2/3 bottle)and layer on top of the cream cheese mixture. sprinkle just a small amount of shredded cheese (i used colby/jack) over the top. bake at 350 for about 20-25 minutes or until dip is heated through and cheese is melted. i just think people tend to shy away from the dip when it's all mixed together because of the strange color. it's more recognizable (retains a brighter red color) when it's layered and gets gobbled up faster! great dip for football season!
  • 3 i suggest using more chicken and more hot sauce with this recipe. also, if you use the chedder cheese, don't use the pre-shredded bags from the grocery store. the cheese in those bags is coated with flour and it seems to make the dip oiler.
  • 4 i have use bleu cheese dressing instead of ranch because thats what some like to eat with buffalo chicken! i also used 2 boneless chicken breasts instead of canned chicken (i cant stand canned meats) grilled it in a pan, cut it into bite sized pieces, put it back in the pan with the hot sauce. when i mixed the the cream cheese and bleu cheese together i added more hotsauce for more of a kick. baked in an 8x8 pan, 350 for 20 minutes. dip was gone in minutes!

Chicken Enchiladas

  • 1 cut up cooked chicken set aside.
  • 2 mix in large bowl 1/2 the shredded cheese 1/4 of the enchilada sauce and rest of ingredients. add chicken and mix well.
  • 3 lay out tortillas on flat surface and evenly distribute chicken mix in middle of tortillas, roll and place them seam side down in a row into a 9x13 greased pan ( pam works good). this will be a tight fit in the pan so roll them tightly making sure the insides are spread from end to end. you can decrease servings, if needed.
  • 4 pour remaining enchilada sauce over top, with rubber scraper separate enchiladas to get sauce in between them.
  • 5 then sprinkle with remaining cheese, cover with foil and bake. time will depend on, if it was refrigerated it will be a longer cook time. uncover last 10 minute serve with lettuce, tomatos, black olives, sour cream, splanish rice, refried beans or black, chips and salsa or whatever you want!

Buffalo Chicken Calzone

  • 1 start by cooking your breaded chicken tenders – store bought will take about 20 minutes. when they are done, turn the oven up to 450 degrees.
  • 2 stretch out your room temperature pizza dough to a round shape and let rest for about ten minutes.

  • 1 (8 ounce) carton mascarpone cheese
  • 1/4 cup dried cranberries, finely chopped
  • 1/2 teaspoon orange peel, finely shredded
  • 1 tablespoon orange liqueur (or orange juice)

Recipe

  • 1 line a baking sheet with foil. butter the foil; set aside.
  • 2 for pralines, cook sugar and butter in a heavy 8-inch skillet over medium heat until sugar begins to melt, shaking skillet occasionally. do not stir.
  • 3 reduce heat to medium-low; cook until sugar turns golden, stirring often with a wooden spoon. remove from heat; stir in nuts. immediately spread coated nuts in a thin layer on prepared baking sheet. cool; break into small pieces.
  • 4 meanwhile, combine mascarpone cheese, cranberries, orange peel, and liqueur or juice in a medium mixing bowl. spoon mixture into a pastry bag fitted with a 1/2 inch wide open-star tip. pipe onto strawberry halves; arrange on a small plate. garnish with pieces of praline.

Chicken Enchiladas

  • 3 large chicken breasts
  • 1 small onion
  • 8 ounces sour cream
  • 2 (10 ounce) cans red enchilada sauce
  • 2 cups mexican blend cheese (shredded)
  • 2 cups mild cheddar cheese (shredded)
  • 6 -10 tortillas

Recipe

  • 1 boil chicken until cooked through.
  • 2 cool chicken then shred into small pieces.
  • 3 chop onion and combine with sour cream and shredded chicken in large bowl.
  • 4 to assemble enchiladas:.
  • 5 lay out one tortilla.
  • 6 spread a small amount of enchilada sauce on tortilla.
  • 7 place 3-4 tablespoons of chicken mixture on tortilla.
  • 8 top with taco cheese (2 tablespoons).
  • 9 roll up tortilla and place seam side down into a 9x13 baking dish.
  • 10 repeat until chicken mixture is all used.
  • 11 cover enchiladas with remaining enchilada sauce and finish by topping them with an even layer of shredded mild cheddar cheese.
  • 12 bake in preheated 350°f oven for 30-35 until cheese is bubbly.
  • 13 all cheeses, enchilada sauce and onion can be used in greater or lesser amounts to taste. its almost impossible to ruin these!

Chicken Enchiladas

  • 1 whole chicken, rotisserie, taken off bone and shredded into bite size pieces
  • 2 ounces diced pimentos, drained
  • 1 ounce diced green chilis, drained
  • 2 cups cheese, fiesta blend
  • 1 teaspoon chili powder (or more)
  • salt and pepper (to season)
  • 1/4 cup butter
  • 1 small onion, diced
  • 1/4 cup flour
  • 8 ounces sour cream
  • 1 cup chicken broth
  • 10 flour tortillas, 1 package

Recipe

  • 1 set pulled chicken aside into large bowl.
  • 2 add pimento, chilies, 1 cup of cheese and chili powder to chicken and mix together well.
  • 3 melt butter in skillet and add onion. cook until onions are tender. remove from heat.
  • 4 using whisk, immediately add flour, sour cream and chicken stock and keep stirring until it thickens. set aside.
  • 5 add 1/2 of the cream mixture to the chicken mixture and mix to blend well.
  • 6 grease a 9x13 baking dish.
  • 7 pull out the 10 tortilla shells and spread the chicken mixture evenly on each, spreading onto the center of the tortilla. roll up and place seam side down in the dish. continue until all 10 are complete.
  • 8 coat with the remainder of the sour cream mixture and cover with the remainder of the cheese.
  • 9 bake at 350 for 20-25 minutes until cheese is brown and bubbly.
