Chicken In Your Salad?

Ingredients

  • Servings: 4
  • 12 ounces fresh spinach or 1 head lettuce
  • 3 hard-boiled eggs, diced
  • 8 ounces cooked & diced boneless chicken breasts
  • 6 ounces cherry tomatoes, diced
  • 1 cup raw broccoli, diced
  • 1/2 cup chickpeas
  • 2 tablespoons balsamic vinegar
  • 1/3 cup parmigeano parmigiano-reggiano cheese
  • 1/2 cup chopped walnuts (optional)

Recipe

  • 1 place spinach in a large bowl.
  • 2 add chicken, eggs, tomatoes, and broccoli.
  • 3 sprinkle with the vinegar and add the cheese and nuts.
