Ingredients

- 12 ounces fresh spinach or 1 head lettuce
- 3 hard-boiled eggs, diced
- 8 ounces cooked & diced boneless chicken breasts
- 6 ounces cherry tomatoes, diced
- 1 cup raw broccoli, diced
- 1/2 cup chickpeas
- 2 tablespoons balsamic vinegar
- 1/3 cup parmigeano parmigiano-reggiano cheese
- 1/2 cup chopped walnuts (optional)
Recipe
- 1 place spinach in a large bowl.
- 2 add chicken, eggs, tomatoes, and broccoli.
