Chicken In Creamy Pan Sauce

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breast halves (1lb.)
  • 2 tablespoons flour
  • 1 tablespoon oil
  • 3/4 cup reduced-sodium fat-free chicken broth
  • 4 ounces light cream cheese, cubed
  • 1 tablespoon parsley (chopped)
  • 2 tablespoons bacon bits (optional)

Recipe

  • 1 coat chicken with flour.
  • 2 heat oil in large skillet on medium heat.
  • 3 add chicken and cook 5 to 6 minutes on each side or until cooked through (165 degrees).
  • 4 remove chicken from skillet, reserving drippings in skillet.
  • 5 cover chicken to keep warm.
  • 6 add broth to skillet.
  • 7 stir to scrape up browned bits from bottom of skillet.
  • 8 add cream cheese, cook 2-3 minutes or until melted and sauce starts to thicken, stirring constantly with wire whisk.
  • 9 return chicken to skillet, turn over to coat both sides of chicken with sauce. cook 2 minutes or until chicken is heated through. sprinkle with parsley.
  • 10 can also top with bacon bits before serving.
