Cranberry Almond Lettuce Salad

Ingredients

  • Servings: 8
  • 1 head romaine lettuce, torn
  • 1 bunch fresh spinach, torn
  • 1 cup dried cranberries
  • 3 green onions, chopped
  • 1/2 cup glazed almonds (instructions below)
  • 3/4 cup fresh grated parmesan cheese
  • 1/2 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1/2 cup sugar
  • salt and pepper
  • 2 tablespoons sugar
  • 1/2 cup sliced almonds

Recipe

  • 1 combine dresssing ingredients in a jar with a lid and shake well.
  • 2 combine salad ingredients in a large bowl.
  • 3 in a sauce pan or skillet combine sugar and almonds.
  • 4 stir constantly until nuts are glazed.
  • 5 be very careful not to burn.
  • 6 pour nuts on waxed paper separating them to cool.
  • 7 mix dressing with lettuce and top with almonds to serve.
